The Role
The Assistant General Manager is a 50 hour salaried management role responsible for running the restaurant as the Manager on Duty. The AGM is the General Manager’s primary operational backup — when the GM is off, the AGM owns the shift to the same standard.
This role requires full mastery of every restaurant station, consistent execution of all daily operations procedures, and the ability to lead the team without supervision. This is a hands-on cooking and leadership role — you’ll be on the line, not behind a desk.
What You’ll Do
- Run every shift to the GM standard — open, operate, and close the restaurant following all daily operations procedures. Assign stations, manage service flow, complete walkthroughs, reconcile cash, and document everything.
- Execute any station — you can be placed at any kitchen or front-of-house station and are expected to execute at a high level, including cooking on the line during service and covering multiple stations when staffing requires it.
- Hold the team accountable — assign team members to stations, enforce food quality and cleanliness standards throughout the shift, and address performance directly. The standard doesn’t change based on who’s watching.
- Oversee the weekly deep clean — when assigned, oversee and participate in the weekly restaurant cleaning and station deep-clean procedures.
- Develop toward GM responsibilities — as you grow, take on GM-adjacent tasks like scheduling and staff management.
What We’re Looking For
Required:
- Prior restaurant management experience (or Potato Coop Food Truck Manager experience)
- Ability to cook and execute every station at a high level during service
- Proven ability to lead a team and hold a consistent standard
- Commitment to following and enforcing standard procedures without deviation
- ServSafe Manager Certification (or ability to obtain)
- Available for full-time shifts including evenings, weekends, and some holidays
- Able to stand for extended periods and lift up to 50 lbs
- Reliable transportation and consistent attendance
Preferred:
- Experience assisting with scheduling or staff management
- Working knowledge of Square POS and ClickUp
