The Pastry Chef de Partie is responsible for leading a designated station, maintaining exceptional food quality and consistency, and upholding the highest standards of Park Hyatt throughout every aspect of production and presentation.
Key Responsibilities
- Lead and oversee a designated pastry station, ensuring consistency, precision, and excellence in the preparation and presentation of desserts, pastries, breads, and specialty confections.
- Prepare and execute pastry items according to established recipes, production schedules, quality standards, and presentation guidelines.
- Support the training, development, and mentorship of Commis Chefs and culinary colleagues, fostering a collaborative, professional, and growth-oriented kitchen environment.
- Maintain the highest standards of product quality, freshness, creativity, and visual presentation across all pastry offerings.
- Ensure strict adherence to food safety, sanitation, and HACCP standards, as well as Hyatt and local health department regulations.
- Assist with daily mise en place, inventory management, product rotation, and the proper storage and handling of ingredients.
- Collaborate with the Pastry Chef and culinary leadership team on menu execution, seasonal offerings, special events, weddings, and holiday programming.
- Support pastry production for restaurants, banquets, in-room dining, and resort-wide events in a fast-paced luxury hospitality environment.
- Monitor workstation organization, cleanliness, and operational efficiency while maintaining a safe and productive work environment.

Qualifications
- Minimum of 2–3 years of professional pastry experience in a luxury hotel, resort, fine dining restaurant, bakery, or high-volume culinary environment.
- Demonstrated experience managing a pastry station independently, with a strong focus on organization, consistency, and execution.
- Formal culinary or pastry education preferred; equivalent combination of training and professional experience will be considered.
- Strong knowledge of classic and modern cooking techniques
- Proven ability to perform effectively in a fast-paced, high-volume environment while maintaining exceptional quality and attention to detail.
- Excellent communication, leadership, and interpersonal skills
- Flexibility to work a various schedule, including weekends and holidays
