Position PurposeThe Sushi Cook plays a critical role in executing Palladino’s sushi program with consistency, precision, and speed. This position requires a strong understanding of sushi preparation, knife skills, and the ability to perform under pressure in a fast-paced, high-volume environment while maintaining top-tier quality and presentation standards.
Key Responsibilities-
Prepare and execute all sushi menu items according to Palladino’s standards, recipes, and presentation guidelines.

Work within the designated sushi station as directed by the Executive Chef and Sous Chef.

Maintain a clean, organized, and fully stocked workstation at all times.

Ensure all fish, rice, and ingredients are handled, stored, and prepared following strict food safety and sanitation standards.

Perform precise knife work, portioning, and fish breakdown as required.

Execute dishes efficiently while maintaining consistency during high-volume service.

Follow prep lists and ensure all mise en place is completed before service.

Monitor product quality and freshness continuously throughout the shift.

Communicate clearly with kitchen team members to ensure smooth service flow.

Maintain cleanliness of tools, knives, cutting boards, and station throughout the shift.

Minimize waste and contribute to food cost control initiatives.

Assist with receiving, storing, and organizing deliveries.

Support team members across the kitchen when needed.

Minimum 3–4 years of experience as a Sushi Cook or similar role in a high-volume restaurant.

Strong knife skills and understanding of fish handling and sushi techniques.

Ability to work efficiently in a fast-paced, high-pressure environment.

Strong attention to detail and commitment to quality and consistency.

Knowledge of food safety and sanitation standards (NYC DOH standards preferred).
