Job Summary

In this role, you’ll be responsible for making regular high-quality cuts, maintaining our meat case, and handling meat inventory while working alongside the Store Manager and our close-knit team to keep the meat department running smoothly. You’ll ensure that company policies and freshness standards are met daily, taking pride in a department that reflects our commitment to the community.

Responsibilities
- Perform various cutting, slicing, and grinding techniques to prepare beef, pork, poultry, and specialty items for retail sale.
- Manage inventory levels through effective ordering and "first-in, first-out" (FIFO) rotation to ensure peak freshness and minimize shrink.
- Maintain a clean, sanitized workspace, adhering strictly to safety standards, health regulations, and company sanitation protocols.
- Oversee department pricing and labeling, ensuring all weights, tares, and "sell-by" dates are accurate and compliant.
- Provide exceptional customer service by fulfilling custom cut requests and offering cooking or preparation advice to shoppers.
- Assist in the unloading of deliveries, ensuring all incoming meat products meet quality specifications and are stored at correct temperatures immediately.

Requirements
- Education: High School Graduate or General Education Degree.
- Experience: Minimum 5 years of professional meat cutting (Retail or Butcher Shop preferred). Minimum 2-3 years of managing and ordering for a meat department.
- Technical Skill: Proficient in using band saws, meat grinders, slicers, and knives.
- Knowledge: Deep understanding of different meat grades, cuts, and anatomy.
- Compliance: Working knowledge of food safety (HACCP or ServSafe certification is a plus).
