Job SummaryWe are seeking an experienced and highly skilled Sushi Chef to join our culinary team. The ideal candidate will have exceptional knife skills, a strong passion for Japanese cuisine, and the ability to create visually stunning and delicious sushi dishes. You will be responsible for managing the sushi station, preparing a variety of sushi items, and ensuring the highest standards of quality and food safety are met.Key Responsibilities
- Prepare and Present Sushi: Masterfully prepare various types of sushi, including maki (rolls), nigiri, and sashimi, ensuring consistency in quality, portion size, and presentation.
- Ingredient Management: Inspect, select, and handle a variety of fresh fish, seafood, fruits, and vegetables to ensure optimal freshness and quality. Monitor food stock levels, place orders for supplies, and minimize waste.
- Menu Development: Collaborate with the Head Chef or management to develop and innovate new menu items and seasonal specials, keeping abreast of culinary trends.
- Hygiene and Safety: Maintain impeccable hygiene and cleanliness standards in all cooking and storage areas. Sterilize utensils, instruments, and equipment before and after each use, adhering strictly to food safety and health regulations (HACCP protocols).
- Customer Interaction (if applicable): In a sushi bar setting, interact with customers, explain menu items, accommodate special requests and dietary considerations, and help create a memorable dining experience.
- Kitchen Collaboration: Work closely with the wait staff and other kitchen members to ensure smooth operations and timely service during busy periods.
- Training and Mentorship: Supervise and train junior kitchen staff and apprentices on proper sushi preparation techniques and food handling practices.
Qualifications & Skills
- Experience: Proven experience as a Sushi Chef or in a similar role in an upscale or high-volume restaurant environment is typically required (2-5 years).
- Culinary Knowledge: Extensive knowledge of Japanese cuisine, traditional sushi-making techniques, and different types of fish and seafood is essential.
- Technical Skills: Exceptional knife handling skills for precise cutting, slicing, and filleting of fish. Proficiency in sushi-rolling techniques and presentation artistry.
- Soft Skills:
