Norikase is seeking an experienced Omakase Chef to join a passionate team dedicated to elevating Jacksonville’s culinary scene through thoughtful technique, pristine ingredients, and a refined guest experience.

This role is ideal for a chef with a deep respect for Japanese cuisine and omakase tradition, who thrives in a fine dining environment and values collaboration, creativity, and consistency.

Responsibilities

  • Execute an exceptional omakase experience with precision, hospitality, and artistry
  • Work with premium fish and seasonal ingredients, ensuring quality and consistency
  • Contribute creative input on new menu items and evolving omakase offerings
  • Maintain high standards of cleanliness, organization, and food safety
  • Collaborate with the culinary and service teams to deliver a seamless guest experience
  • Uphold the standards and vision of Norikase

Qualifications

  • Proven experience as an Omakase Chef or Sushi Chef in a fine dining setting
  • Strong background in Japanese cuisine and traditional omakase service
  • Advanced knife skills and experience with whole fish breakdown
  • Detail oriented with a strong sense of presentation and guest interaction
  • Team focused mindset with a desire to grow and improve
  • Availability to work nights, weekends, and service hours
