Norcino Salumi is an artisan, old world salumi producer. We make Italian style cured meats using whole animals and by-hand techniques under USDA inspection.
We are a tiny company entering a phase of growth in our 3rd year and building out a new USDA facility. This is an opportunity to join a fast growing, exciting concept that embraces old-world philosophies and the local food movement. We received our Slow Food Snail of Approval in 2024 in recognition of our commitment to sustainable, fair, ethically sourced local foods. Responsibilities are on par with other Plant Manager positions in USDA establishments.
We make everything from pepperoni to salami, mortadella, and whole muscle salumi like pancetta, guanciale, and coppa. This is a great learning opportunity for someone with some butchery/foodservice experience looking to expand their knowledge and learn hands-on techniques. Production lead will oversee / participate in production of all of these products.
Candidates must have prior whole animal butchery experience and/or experience in a USDA inspected facility. Extensive knowledge of European style cured meats is not required, but certainly helps. Desire and commitment to learning this craft is a 100% requirement!
