Required Responsibilities
- Review the production schedule.
- Enforce hygiene practices on theproduction floor. Employees' hands must be washed at least every hour and everytime they return to their work areas.
- Ensure we have at least theminimum resources to cover all necessary departmental duties.
- Train new hires and get them setup for success.
- Ensure that the bowls, lids, andcutlery inventory is thoroughly reviewed and compared with the productionschedule.
- Revise CCPs to ensure that thereare no expired items.
- Complete all exposure logs must becompleted in real-time.
- Ensure every table has the specs(tablets, golden samples, and exposure logs).
- Revise the thawing room for theitems decanted for Production.
- Transfer from the general storageto the Production Area (cutlery, bowls, lids, belly bands, paper trays, dryseeds, jelly, and flat crackers)
- Verify the inventory that will bedecanted for each service (breakfast, lunch, and dinner).
- Check the inventory of items thatthe Hot Kitchen and slicing room prepared.
- Transfer cardboard boxes and lidsfrom the Cutlery department to production.
- Assist with the dish preparationif necessary.
- Revise the items cooked by Hotkitchen personnel to ensure we have all the items ready for the next day.
- Review and make the necessaryadjustments and approvals in ADP.
- Update Makeshift schedule asrequired (new hire, department change)
- Comply with the attendance policyand address any issue of poor attendance.
- Conduct workstation inspections toverify compliance.
- Comply with the Productionstandards, efficiency, waste, etc.
- Promote and maintain teamworkamong employees.
- Prepare and send daily reporting.
- Other job duties may be assignedbased on operational need
- High School Diploma required.
- College or Technical Training is aplus but not required.
- At least two years of experiencesupervising/managing people, preferably in food production.
- Knowledge of internationalcooking, production presentation, menus redaction, processes set-up andmonitoring, staff training
- Good knowledge of HACCP & foodsafety standards
- Aptitude in showingself-initiative and follow-through
- Detail-oriented and ability to visualizethe “Bigger Picture.”
- Computer knowledge includes but isnot limited to, Microsoft Office and basic database functionality.
