Hemenway’s is looking for a Sushi & Raw Bar Cook to join the team.

About the Position: In the Sushi & Raw Bar Cook role, you will be responsible for preparing and executing raw seafood dishes, focusing on sashimi, tartares, sushi rolls, and other creative raw fish presentations. This role blends artistry, precision, and technical expertise to enhance our menu offerings and deliver exceptional dining experiences. 

About You: You are passionate about food. You have a strong sense of urgency, great organizational skills, and a positive attitude. Looking for someone who is passionate about working raw bar and is looking for a team-oriented environment. Someone to take the lead of a small raw bar team to help develop and grow with them.

Essential Duties:

• Prepare sushi dishes, including rolls, sashimi, tartares, and nigiri, following established recipes and presentation standards.
• Ability to shuck oysters and clams.
• Ensure the quality and freshness of all raw ingredients, especially seafood.
• Collaborate with kitchen staff to maintain smooth and efficient service operations.
• Maintain cleanliness, organization, and safety in the sushi and raw bar station and kitchen.
• Inspect and maintain sushi bar equipment, reporting any issues to management.
• Follow food safety and sanitation protocols to meet the highest hygiene standards.
• Engage with guests, as this is a guest-facing role, delivering exceptional service and fostering memorable dining experiences.
• Work closely with the production team to ensure the sushi station is prepared for service.
• Produce sushi rice daily, ensuring proper preparation and quality.

Qualifications:
