The Kitchen Manager position is responsible for the overall operations of the kitchen area of the restaurant, ensuring the department runs smoothly and complies with safety regulations. Duties include ordering food and supplies, monitoring, hiring, training, and evaluating staff as well as supervising the food prep and cooking, and maintaining a fully-stocked kitchen inventory and compliance with safety and cleanliness standards. 

To succeed in this role, a Kitchen Manager is expected to have a positive attitude, follow our core values, and ability to work well under pressure with colleagues, subordinates and guests. A minimum of 3 years’ of experience in food preparation such as line cook, fry cook and/or expeditor is required. 

Areas of Responsibility Include:

  • Overseeing daily operations for a larger food and beverage establishment featuring multiple indoor and outdoor, multi-concept venues both buffet and 7 day/week quick serve operation.
  • Managing venues with strong seasonal and sports-themed components, ensuring consistent service quality across all concepts.
  • Leading and supervising a Union food and beverage team, maintaining positive working relationships and ensuring compliance with all union standards.
  • Applying union supervision practices, including scheduling, labor management, and adherence to the terms and guidelines outlined in the Collective Bargaining Agreement (CBA).  
  • Knowledge of managing a Collective Bargaining Agreement is a plus.
  • Coordinating staffing, training, and performance expectations in accordance with both operational needs and union requirements.
  • Ensuring operational efficiency, guest satisfaction, and alignment with company service standards across all venue types.
  • Compile and manage budget including food costs and labor costs.

 

Job Duties/Responsibilities

 

  • Supervises and coordinates activities concerning all back-of-house operations and personnel, including food prep, kitchen, storeroom and dishwashing.
  • Hires, trains, supervises, schedules, evaluates, and discharges back-of-house personnel including payroll.
  • Purchases food items, supplies and equipment. Coordinates menu planning, food production and food surpluses, to control costs.
  • Monitor kitchen, food supplies and equipment inventory.
  • Supervises food preparation personnel to ensure food adheres to standards of quality to maintain cleanliness of kitchen and equipment. 
  • Attends scheduled staff meetings.
  • Oversees training of kitchen personnel in safe operation of all kitchen equipment and utensils.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices.
  • Responsible for maintaining cleaning schedules for kitchen floors, mats, walls, and other equipment and food storage areas.
  • Checks and maintains proper food holding and refrigeration temperature control.
  • Performs all functions in accordance with applicable state laws including Health Department.
  • Maintain objectives of The New Meadowlands Racetrack including established policies, procedures and controls.
  • Work schedule includes opening and closing shifts; days, nights, weekends and holidays.
  • Performs other related duties as assigned.

 

Required Skills/Abilities:

  • Must have strong organizational and multi-tasking skills with the ability to perform well in a fast-paced environment.
  • Must have attention to cleanliness and safety.
  • Must have basic math skills such as adding and subtracting, multiplication, division, ratios and percentages.
  • Must be able to communicate clearly and effectively.
  • Must successfully pass a pre-employment background check. New Jersey Racing Commission license is required for all employees.

 

Physical Requirements:

 

  • Must be able to work in a standing position for long periods of time.
  • Must be able to lift, move, balance, and carry items weighing up to 50 pounds frequently.
  • Exposure to extreme heat, steam, and cold present in a kitchen environment.
  • Manual dexterity to cut and chop foods and perform other related tasks.
  • Must maintain valid certification in Food Safety and TIPS Alcohol training, as well as any other company requirements.

Salary : $80,000 - $85,000
