PURPOSE OF POSITION
Responsible for overseeing the smooth and profitable operations of The Food & Beverage Department. Oversee hiring, training and scheduling of all employees to ensure the highest level of guest service possible while meeting or exceeding revenue goals/maintaining budgets. Responsible for determining food and beverage pricing and maintaining the budgeted controllable costs. Always leading in example of positive guest and employee relations. Actively engaging with the community and its hospitality workers to ensure the Mountain Lodge Telluride maintains a presence as the employer of choice.
POSITION/MISSION OVERVIEW
The Food & Beverage Manager must always strive to exceed the expectations of our guests by continually monitoring the quality of service provided by the Food & Beverage team. Responsible for designing and implementing ongoing team trainings with the ability to provide measured results. The Food & Beverage Manager will find him or herself in a variety of dynamic interpersonal and/or business situations at any given time; being flexible and having the ability to multi-task are a must. This position requires consistency, integrity and a commitment to the overall well being of the operation and team. The Food & Beverage Manager will participate in the development of associates who are interested in growing as in their careers.
ESSENTIAL JOB FUNCTIONS/RESPONSIBILITIES (other duties may be assigned. Management also reserves the right to change or modify position descriptions from time-to-time to meet the needs of the business with or without notice).
- Serves as a point of contact for guests.
- Understands the concepts of the internal and external guest and treats each with respect and professionalism at all times.
- Attends all necessary meetings and disseminates information accordingly.
- Develops and maintains monthly training sessions.
- Oversees scheduling of all Food & Beverage associates and monitors/adjusts staffing levels as necessary.
- Completes payroll in a timely and accurate manner for all associates within the Food & Beverage Department.
- Creates and monitors schedules throughout the year to ensure proper staffing and appropriate labor costs.
- Assists in the development and optimization of annual budgets.
- Maintains and critiques all established service standards.
- Able to collaborate on both food and beverage menus for the Restaurant and Banquets/Catering.
- Oversees monthly inventory and ensures PAR levels are maintained in accordance with the budget.
- Ensure Food & Beverage budget/business goals are achieved.
- Reconcile all invoices in a timely fashion.
- Conducts detailed performance reviews for all assigned staff.
- Conducts daily inspection of equipment and facilities, front of house and back of house, to ensure their cleanliness and upkeep.
- Abides by Mountain Lodge Telluride policies, rules, standards and regulations as depicted in the employee handbook; including all addendums denoted verbally, in writing and via email.

- Fluency in English is required, additional language ability is a bonus

WORK ENVIORNMENT
- The Food & Beverage Department is a very fast-paced and detail-oriented environment.
- Regular attendance in conformance with the outlined standards; which may be revised by Mountain Lodge Telluride at any time in accordance with business needs, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.
- Employees may be required to work varying schedules to reflect the business needs of The Food & Beverage Department.
- This position is monitored by direct/indirect supervision to ensure all operational standards are upheld.
- Upon employment, all employees are required to fully comply with the Mountain Lodge Telluride’s rules and regulations for the safe and efficient operation of the business. Employees who violate any rules, regulations or policies will be subject to disciplinary action up to and including termination of employment.
SAFETY & SANITATION
- The safety and sanitation displayed throughout the Food & Beverage Department should be considered of the upmost importance at all times. All employees must be knowledgeable of both HACCP and OSHA standards regarding sanitation, cross-contamination, proper use & disposal of chemicals, and also must use their best judgement to not be subject to situations which fall outside of the Mountain Lodge Telluride’s outlined safety & sanitation procedures.
