Duties
- Prepare a variety of sushi and sashimi with precision and artistry, adhering to traditional techniques and presentation standards
- Plan and develop sushi menus that align with restaurant themes and customer preferences
- Ensure all food handling practices comply with safety and sanitation regulations
- Maintain cleanliness and organization of the sushi station and kitchen area
- Select fresh ingredients, including fish, vegetables, and rice, ensuring high-quality standards are met
- Collaborate with kitchen staff to coordinate meal preparation and service flow
- Monitor inventory levels of ingredients and supplies, placing orders as needed
- Assist in training junior kitchen staff on sushi preparation techniques and food safety protocols
- Uphold the restaurant’s reputation for fine dining by delivering exceptional quality consistently
Qualifications
- Proven experience as a Sushi Chef or in a similar role within the food industry, preferably in fine dining or Japanese cuisine establishments
- Strong knife skills and expertise in food preparation, cooking, and meal presentation
- Knowledge of food safety standards and proper handling of raw ingredients
- Experience with menu planning, catering, and food service operations
- Excellent understanding of culinary techniques related to sushi making, including rice preparation and fish slicing
- Background in dietary department or dietary aide experience is a plus but not required
- Ability to work efficiently under pressure while maintaining attention to detail
- Strong communication skills and ability to work collaboratively within a team
