Pay Rate: $17.00 to $21.00 per hour.
- Job Responsibilities:
- Dishwashing & Sanitation
- Operate and maintain industrial dishwashing equipment (including commercial dishwashing machine) safely and efficiently
- Clean and sanitize ass dishes, glassware, utensils, pots and pans according to resort cleanliness and sanitation standards
- Sort, scrape, and pre-rinse items prior to machine washing
- Wash delicate or non-machine-safe items be hand when necessary
- Inspect all items for spots, streaks, chips or damage before returning them to service
- Ensure flawless cleanliness of all guest-facing tableware, flatware and glassware
- Health, Safety & Hygiene
- Follow all health department regulations and Mirbeau sanitation policies at all times
- Monitor and maintain proper water temperature, sanitizer levels, and cleaning chemicals
- Use PPE properly at appropriate times
- Report any sanitation issues, health concerns, or safety hazards to management
- Cleaning & Maintenance
- Keep all dishwashing and kitchen areas clean, organized and free of debris
- Clean and sanitize sinks, dish stations, mats, drains and equipment daily and at the end of each shift
- Report any machine or equipment malfunctions or repair needs to management
- Maintain cleanliness of BOH floors, walls, and storage areas
- Separate and dispose of trash, food waste and recycling in designated areas
- Support & Collaboration
- Ensure timely delivery of clean dishware and service items to kitchen and FOH staff
- Work collaboratively with both BOH and FOH teams to ensure smooth, seamless service
- Restock kitchen stations with clean and sanitized items throughout service periods
- Rotate dishware and service items to minimize wear and tear
- Assist and support prep and kitchen staff with basic tasks when needed
- Support fast turnover of dishes and tools during high-volume periods
- Operational Excellence
- Performing opening, closing and assigned sidework duties consistently and thoroughly
- Secure all equipment and supplies according to closing and safety guidelines
- Attend and participate in staff meetings and trainings as required
- Follow directives from management and chefs
- Professionalism
- Maintain a professional demeanor, grooming and appearance in alignment Forbes and Mirbeau standards
- Be consistent in reliability, work ethic and flexibility
- Maintain composure under high-volume, fast-paced service periods

Qualifications, Skills & Educational Requirements:
- Experience
- Previous dishwashing or stewarding experience in a professional kitchen preferred
- Experience in elevated or fine dining environments highly valued
- Familiarity with commercial dishwashing equipment and BOH operations
- Ability to operate industrial dish machines and three-compartment sink systems
- Knowledge of proper cleaning, sanitizing and storage procedures
- Knowledge of safe and appropriate use of chemical cleaning agents, sanitizers and PPE (personal protective equipment)
- Understanding of food safety guidelines and sanitation standards
- Commitment to maintaining flawless presentation standards for all dishware, glassware and utensils
- Strong attention to detail, especially regarding cleanliness and quality control
- Physical Requirements
- Ability to stand for long periods throughout the shift
- Able to lift up to 50 lbs and perform repetitive tasks in a fast-paced, high-volume kitchen
- Capable of working efficiently under pressure during bust service periods
- Professionalism & Work Ethic
- Maintains a professional demeanor, grooming and appearance in alignment with Forbes and Mirbeau standards
