Food Truck Operator / Road Crew Manager

Position Summary

Road Crew by Middle James Brewing is looking for a reliable, energetic, and experienced Food Truck Operator to manage the day-to-day operation of our food truck. This person will be responsible for running the truck 5 days per week, leading 1–2 team members during service, maintaining food quality and speed, managing prep and inventory, and representing the Middle James brand with great hospitality.

This role is ideal for someone who can cook, lead, stay organized, solve problems on the fly, and take ownership of the truck like it is their own operation.

Key ResponsibilitiesDaily Food Truck Operations

  • Operate the Road Crew food truck 5 days per week at Middle James locations and approved events.
  • Open, set up, run, break down, clean, and secure the truck each shift.
  • Ensure the truck is stocked, organized, clean, and ready for service.
  • Safely drive, park, and operate the truck as needed.
  • Manage power, propane, water, equipment, fryers, refrigeration, and general truck readiness.
  • Communicate any maintenance, mechanical, or equipment issues quickly.

Food Preparation & Service

  • Prepare and serve menu items according to Middle James standards.
  • Maintain consistent quality, portions, speed, and presentation.
  • Execute core Road Crew items such as wings, burgers, sandwiches, kids items, and specials.
  • Help develop and execute rotating specials when appropriate.
  • Ensure food is served hot, fresh, accurate, and in a timely manner.

Team Leadership

  • Manage 1–2 food truck employees during shifts.
  • Assign roles, keep the line moving, and hold staff accountable.
  • Train new employees on food prep, customer service, cleanliness, safety, and truck procedures.
  • Set the tone for a positive, professional, team-first work environment.
  • Communicate staffing needs or performance concerns to ownership/management.

Food Safety & Cleanliness

  • Follow all health department, food safety, and sanitation standards.
  • Maintain proper food storage, labeling, temperature logs, and cleaning procedures.
  • Keep the truck clean during and after service.
  • Ensure all employees follow safe food handling practices.
  • Maintain a clean and organized commissary prep area when using the Pineville kitchen.

Inventory & Ordering

  • Track food, paper goods, sauces, cleaning supplies, and truck-specific inventory.
  • Communicate ordering needs in advance to avoid running out of product.
  • Minimize waste through proper prep, storage, and portion control.
  • Assist with weekly prep lists and par levels.

Customer Service & Brand Representation

  • Represent Middle James Brewing with hospitality, professionalism, and personality.
  • Interact with customers in a friendly, helpful, and positive way.
  • Handle guest issues calmly and appropriately.
  • Help create a fun, welcoming experience that reflects the Middle James brand.

Requirements

  • Previous kitchen, food truck, restaurant, or catering experience required.
  • Leadership or shift lead experience strongly preferred.
  • Must be comfortable managing 1–2 employees during service.
  • Ability to work nights, weekends, and event-based schedules.
  • Valid driver’s license and clean driving record preferred/required.
  • Ability to safely drive and operate a food truck.
  • Ability to lift 50 lbs and work on your feet for long periods.
  • Strong communication and organization skills.
  • Must be dependable, punctual, and able to work independently.
  • ServSafe or food safety certification preferred, or willingness to obtain.

Pay: $23.25 - $28.00 per hour
