**Job Title: Food Safety / GMP Pre-Audit Consultant (Temporary, On-Site)**

**About the role:**
Mi Coronel Tortillas, a tortilla manufacturing facility in Lebanon, TN, is preparing for a GMP (Good Manufacturing Practices) certification audit through AIB International, scheduled for late October 2026. We are looking for an experienced food safety consultant to conduct a **pre-audit / gap assessment** of our facility ahead of the official inspection.

**What you'll do:**
- Walk the production floor and facility with our team to identify gaps against GMP / food safety prerequisite program standards (covering areas such as personnel practices, facility maintenance, cleaning/sanitation, pest management, and overall program documentation).
- Point out what is currently compliant and what needs correction before the official audit.
- Provide a written summary of findings, prioritized by severity (critical vs. minor).
- Give practical, actionable recommendations we can implement in the weeks before the audit.

**What we're looking for:**
- Experience conducting or supporting GMP, HACCP, AIB, SQF, or similar third-party food safety audits.
- Familiarity with FDA food safety requirements (21 CFR 117) and/or AIB International's Consolidated Standards.
- PCQI, HACCP, or related food safety certification preferred.
- Comfortable doing a hands-on facility walkthrough in a working production environment.
- Available for a single on-site visit in the coming weeks (flexible scheduling), based in or able to travel to Middle Tennessee.
