- Preparing all food items following proper recipes and procedures specified by the Executive Chef.
- Ensuring all food items are prepared in a timely fashion.
- Using batch-cooking methods when appropriate to ensure a fresh product.
- Visually inspecting all food that is ready to be served for proper plating.
- Regularly meeting with the Executive Chef to discuss menu preparation for the upcoming weeks and suggesting ways to improve food quality and efficient production.
- Maintaining kitchen sanitation and safety standards.
- Cleaning and sanitizing all work areas and equipment before and after use.
- Practicing correct food handling and food storage procedures.
- Maintaining documentation of all temperature charts and records.
- Completing assigned cleaning duties to ensure compliance with sanitary standards.
- Overseeing and directing all dining service team members in the absence of the Executive Chef.
- Training new staff using the Dining Services Training Manual.
- Accurately completing all food production records per company policies and federal/state guidelines.
- Contributing to team success through positive interactions with residents and staff.
- Ordering and maintaining stock.
- A minimum of 5 years’ experience in quality food preparation.
- Experience in scratch cooking in a high-volume, fine dining setting.
- Proficiency in computer skills including MS Outlook, Word, etc.
