What are the responsibilities and job description for the Butcher Shop Assistant position at Memphis Meat Processing?
Job Summary
As a Butcher Shop Assistant, you’ll help prepare and package meat while keeping the shop clean and organized. You will have an opportunity to learn the art of butchery if you so desire to become a professional butcher.
Duties
Processing - 4 days per week:
- Prepare, wrap, weigh, label and package meat products accurately.
- Inspect products for quality, rotate perishable goods, and maintain clean work areas using food safety sanitizing procedures.
Slaughter - 1 day per week:
- Skin beef, bison and hogs - approximately 20 animals per week. It's not pleasant, no one likes doing it, but it's only 1 day per week and the rest of the week is not bad at all.
- Trim, wash, weigh, tag and record weights and pertinent carcass info.
- No experience necessary but knife skills are very helpful.
Skills
- Essential: Food handling, food safety, sanitizing procedures, basic knife skills, and attention to quality.
- Essential: Clear communication and ability to follow safe work practices.
- Essential: Organizational and attention to detail skills.
- Helpful: Butchery, meat cutting, trimming, food production, and packaging experience.
- Must be able to lift, bend, stand for long periods of time, handle noise from machinery, work hard and be dependable, play nice with others.
We work M-F 7:00am - 4:00pm, have great benefits, and a small friendly staff. We have very high standards and we are looking for someone who would like to make this a career.

Pay: $16.00 - $18.00 per hour
