Job Summary:
We are seeking a skilled professional meat cutter. Whole carcass breakdown preferred but willing to train someone with the aptitude to learn it. Must be experienced with a knife, fast and able to hit the ground running. Speed and accuracy a must. This is not an entry level job. Only those with professional meat cutting experience will be contacted.
Responsibilities:
- Cut, trim, and prepare various types of meat according to established standards and customer specifications
- Follow all safety protocols related to knife handling and equipment operation
- Collaborate with team members to meet production goals efficiently
- Work the kill floor 1 day per week; slaughtering beef, bison and hogs.
Skills
- Proven experience in meat cutting, food production, or food preparation within the food industry or restaurant environment
- Strong knife skills and proficiency in meat cutting techniques
- Knowledge of food safety standards and proper food handling procedures
- Ability to operate equipment safely and effectively
- Excellent attention to detail for precise cuts and packaging accuracy
- Good physical stamina to stand for extended periods and handle heavy loads when necessary

Qualifications:
Experience: Minimum of 2-5 years in a butchery or food production environment, with at least 1-2 years in a supervisory or leadership role.
Skills:
Strong knowledge of meat processing techniques, cuts, and food safety standards.
Excellent knife skills are a must.
Strong communication skills, with the ability to provide clear instructions and feedback.
Detail-oriented with a focus on maintaining high-quality standards.
Physical Requirements:
Ability to lift heavy items (up to 50 lbs) and stand for extended periods.
Comfortable working in a cold environment (e.g., walk-in coolers/freezers).
Ability to operate and maintain butchery equipment (e.g., meat slicers, knives, and saws).
