What are the responsibilities and job description for the Pit Master position at Melvin's Barbeque?
Our Pitmaster/Smoker is in charge of crafting flavorful smoked meats and seasonings, ensuring everything served is fresh, consistent, and meets our kitchen’s high standards.
Pit masters come in early and get the meat seasoned, put on the pit and then clean up after themselves. Must have experience with working with an all-wood pit. ServSafe certification is REQUIRED. The ideal candidate is a team player, has a great personality, and is a self-starter that can see the bigger picture of service and customer experience. We pride ourselves in the quality of our food and expect our cooks to inspect and taste test to prevent burnt or over seasoned food. Must be able to follow directions and recipes provided. We also encourage experimenting with new menu items and specials.
Pay is based on experience and the schedule will vary. We offer employee benefits such as every Sunday off, employee discounts, health savings account, and paid time off.
Applicants must have proven pitmaster experience. Please do not apply if you do not have prior pitmaster experience.
Applicants will be asked to cook meats on our pits as part of the interview.
Duties, Responsibilities, Requirements:
- Early morning (5:00 am) keyholder position. Position requires reliability and timeliness.
- ServSafe Certification REQUIRED
- Knowledge of raw meat handling guidelines.
- Ability to build and maintaining fires.
- Ability to follow direction, accept constructive criticism, follow recipes, and operate without constant supervision following a lengthy training period
- Flexibility and ability to adapt to changing needs of restaurant daily.
- Organizational skills are a must. BBQ smoker will be utilizing multiple smokers, multiple protein types, time constraints, etc.
- Attention to detail and quality control are keys to being successful at this this position.
- Loading, unloading smokers, coolers and dry storage. Checking in orders, packaging product, and assisting with catering needs.
- Understand health, safety, and sanitation regulations.

- Perform job functions with attention to detail, speed and accuracy.
- Prioritize, organize work and follow through with assigned tasks.
- Be a clear thinker, remain calm and resolve problems using good judgment.
- Work well under pressure of meeting production schedules and timelines of food displays.
- Handle multiple tasks at one time while maintaining a high level of professionalism.
- Maintain a clean, neat and organized work environment.
- Work in a fast paced, intense work environment, under sometimes extreme heat and stress.
Physicality Requirements:
- Stands during entire shift.
- Ability to work in a high temperature environment
- Reaches, bends and stoops frequently.
- Ability to lift up to 80lbs.

Pay: $24.00 - $29.00 per hour
Expected hours: 45 – 50 per week
