MICHELIN Guide Recommended Mawa's Kitchen is seeking a skilled Sous Chef to join our culinary team. Mawa's Kitchen is known for its flavorful, organic dishes blending Middle Eastern and African roots with French-American flair. The Sous Chef position at Mawa's Kitchen is an integral position that works alongside James Beard nominated Executive Chef Mawa McQueen to help maintain customers high expectations when it comes to food quality, kitchen operations and creative menu planning. This position is a full time, year-round position, seasonal only applicants will not be considered.
Essential Responsibilities:
- Training line cooks to ensure kitchen operations run smoothly and they filly understand their roles in the kitchen
- Expediting lunch or dinner service according to assigned shift
- Creating weekly schedules for the culinary department while monitoring and being mindful of budget and volume levels
- Communicating with the restaurant manager daily regarding staff performance, guest feedback, special requests, menu changes, etc.
- Assisting in recipe and menu creation, including recipe testing and teaching front of house staff about new dishes and unique ingredients
- Managing food inventory, ordering and stocking
- Assisting Chef Mawa at catering events and offsite events that represent Mawa's Kitchen.
- Ensuring food costs are at the forefront of menu development, systems, and pricing
- Inspecting product quality, pricing, and sourcing
- Building and maintaining a positive relationship with food vendors, reps and providers
- Assisting with culinary payroll
- Assisting all team members in the organization of kitchen items, including dry goods, kitchen equipment, storage containers, cleaning supplies and proper rotation and organization of all food deliveries
Candidate requirements include:
- 4 years minimum of culinary experience in a sous chef position in a fine dining restaurant
- Proven track record of managing kitchen staff and executing menus
- Excellent time management skills and can operate in an open-kitchen
- Experience in training staff and maintaining a positive, fun team environment
- ServSafe certification
- Knowledge of a variety of culinary techniques, strong knife skills
- Understanding and practice of of food safety and sanitation regulations
- Ability to lift up to 50lbs and stand for long periods of time
The salary range for the sous chef position starts at $75,000. Actual pay is dependent on experience and all salaried roles are eligible for a bonus.
