As an Assistant Director of Dining Services, you will carry out our Mission of Love by leading Health Care, Personal Care Dining Services and the central kitchen Culinary Arts Center, Catering, Village Cafe by developing and managing policies, procedures and systems that will positively impact hospitality and improve the quality of food and services. Strategize to compete with other long-term care and transitional care facilities to achieve high quality results. Direct and support the appointed HCC Dining Services and Personal Care leadership team with planning and management, and sales/revenue. Assist the Assistant Dining Services Manager from Retirement Living with HCC Gift Shop when needed.
Our Assistant Director of Dining Services is responsible for the following:
- Demonstrates knowledge of Federal, State, and local regulations that pertain to food and nutritional care in a long-term care and personal care setting. Demonstrate knowledge of local, state, and federal sanitation regulation and HACCP guidelines and the ability to develop and implement effective food safety programs, includes both sanitation and HACCP, in accordance with regulatory guidelines.
- Demonstrates knowledge of quality of food preparation and general knowledge of various meal programs and create daily assurance of quality, timely, accurate and therapeutic diet distribution, and attractive overall plate presentation, through all phases of meal assembly adhering to monitoring tools, menus, and practices. Demonstrate the knowledge of general and therapeutic nutrition in menu planning.
- Responsible to watch trends within the industry to enable us to make use of current trends and technology to increase our productivity and marketability. This position will also assist the Director of Food Services to establish changes to dining in keeping with current market strategies to maintain and improve resident/customer satisfaction. Demonstrates actions that promote excellent dining experience for residents in their neighborhood.
- Oversee sanitation inspections in all aspects of Health Care and Personal Care Dining at the Elizabethtown campus. Demonstrate knowledge of local, state, and federal sanitation regulation and HACCP guidelines and the ability to develop and implement effective food safety programs, including both sanitation and HACCP, in accordance with regulatory guidelines. Reduce and/or eliminate the risk of deficiency and create correction action plan according to findings.
- Develop and implement written objectives, short-term and long-term goals for Health Care Center residents, Personal Care residents, Culinary Arts Center, and Village Cafe customers to provide high quality programs consistent with the philosophy of the Masonic Village and Food Services Department.
- Works together with the Nutrition Services Manager and Chef Manager to direct the activities to ensure accurate meal and supplement preparation, assembly, and distribution.
- Performs and/or directs Masonic Village and Food Services Department Quality Improvement Program under the coordination of Food Service Quality Improvement Coordinator. Participates in facility QAPI when food, culinary and nutrition services are involved.
- Establishes and maintains effective communication with Health Care Center, Personal Care, Transitional Care Unit, and Evergreen hospice residents to discuss individual dietary needs and changes. Perform spot checks and direct meal rounds for country kitchen meal services.
- Develop and manage employee in-service education and establish internal equity among staff by building in-house training programs to teach and/or review current and new culinary techniques. Develop and implement in-service education programs with Masonic Village Food Services Department in-service instructor.
- Develop and maintain annual operating and capital budget for Health Care Dining, Personal Care Dining, Culinary Arts Center, and Village Cafe. Fiscally responsible for department budget and understands the financial implications of decisions. Develop, implement, and follow a responsible budget that permits for future planning and development. Works with Director in finalizing the budget for the department. Maintains and monitors monthly inventory record, monthly purchase summary and maintains record of meals served, take action where appropriate. Directs and/or conducts smallware inventory.
What You Need as an Assistant Director of Dining Services :
- Four (4) year college degree in Food Services Management or equivalent preferred, with a minimum of five years supervising experience in health care food service and/or associate degree in business management/administration program with emphasis on customer service skills preferred, with a minimum of five recent years of experience in customer service or related field.
- Good oral and written communication skills.
- Strong attention to detail, proven organizational skills, ability to meet deadlines and handle multiple tasks.
- Ability to interact with fellow employees as a team member and to relate to board members, residents, employees, and other persons in a highly professional manner.
- CDM certification required.
- Current and proficient knowledge of office software, i.e., Microsoft Word, Excel, Power Point, and e-mail is essential.
