Essential Duties/Major Accountabilities
- Responsible for care and cleaning of Culinary Services Department, including kitchen equipment, refrigeration units, dining room and storeroom.
- Keeps all food service areas in sanitary condition.
- Cleans all tables, work surfaces, walls, windows, floors and storage units.
- Cleans all refrigeration units and food service equipment.
- Operates dishwashing machine.
- Washes, air dries and stores all kitchenware and utensils.
- Washes and sanitizes pots and pans.
- Removes trash and sanitizes trash cans.
- Sets up trays and tables, as well as serves trays.
- Serves food in dining room and busses trays as needed.
- Pours and covers beverages.
- Assists in preparing and covering food.
- Cleans work area and storerooms.
- Assists in the proper care and use of kitchen equipment.
- Prepares salad, desserts and other miscellaneous items as directed.
- Assists in preparation and plating of sandwiches, entrees, soup, etc.
- Serves residents meals in the dining room.
- Cleans and maintains the dining room in accordance with sanitary standards.
- Sets up table for meal service and clearing upon completion of service.
- Assists with cart preparation and transporting meals.
- Uses cash register, accepts money and accurately makes change, as necessary.
- Sets up dining room table with napkins, silverware, china and condiments.
- At mealtime provides beverages, butter, creamers, salad dressings, etc.
- Clears table upon completion of meals; returns soiled dishes and utensils to dishwasher. Keeps wet and dry trash separate, garbage to disposal and paper goods to trash cans.
- Washes table and cleans salt and pepper shakers, sugar dispenser.
- Resets table with linen paper goods, silverware and china, as applicable.
- Sweeps, mops and vacuums floors.
- Cleans chairs, window sills and frames, windows, serving table, tray stands, table bases, and spot cleans wall and doors
- Assists with preparation of carts and trays for Healthcare Facility.
- Assists with salad and dessert preparation and distribution.
- Makes coffee and tea as needed.
- Reports on any unsafe or malfunctioning equipment.
- Assists in the receiving and storage of food and supplies, as needed.
- Stocks pantries with supplies.
- Tallies the daily menu items offered.
- Assists with the training of new Culinary Services Aide employees.
- Performs other duties as assigned.

- High School Diploma or equivalent preferred.
- Current Serv-Safe Certification preferred.
- Previous institutional dietary services experience is preferred.
- Must be able to read, write, speak and understand the English language.
- Must understand and follow instructions and directions.
- Must be able to follow diet orders, tray tickets, and work assignments.
- This position will show a willingness to perform routine, repetitive tasks with frequent interruptions.
- Must have good motor coordination and manual dexterity for various work routines such as preparing food items, serving food items and food trays, handling soiled dishes, operating dietary equipment and cleaning the work area.
- Must be able to handle money and make change
- Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel and the general public.
- Must have patience, tact, a cheerful disposition and enthusiasm, as well as the willingness to handle difficult residents.
- General understanding of Therapeutic diets is preferred.
- Must have a general understanding of sanitary procedures.
- Must be able and willing to work flexible hours, such as during an emergency situation.
- Must be patient and tolerant toward staff, residents and family members.
- Must function independently, and have flexibility, personal integrity, and the ability to work effectively with residents, personnel and support agencies.
- Must be able to meet the standards of the MMH MVP Customer Service Program.
- Must be able to stand and walks intermittently throughout the workday, as well as reaches, stoops, bends, lifts and carries and manipulates various food products, dietary supplies and equipment.
- Slip Resistant Shoes are required.
- Must be able to work with chemicals and cleaning agents.
- Must be able to cope with the mental emotional stress of the position.
- Must possess sight/hearing senses or use prosthetics that will enable these senses to function adequately so that the requirements of this position can be fully met.
- Must be in good general health and demonstrate emotional stability.
- Must be able to lift, push, pull and move equipment, supplies, etc. up to 50 pounds.
- Must be able to withstand exposure to temperature and humidly changes as in entering refrigerated storage areas, working near ovens and ranges, dish-washing machine and the steam table.
- Must be able to assist in the evacuation of residents.
- Works in all kitchen areas.
- Sits, stands, bends, lifts and moves intermittently during working hours.
- Is involved with residents, personnel, visitors, government agencies/personnel, etc. under all conditions and circumstances.
- Must be able to relate to and work with the ill, disabled, elderly, emotionally upset, and at times, hostile people within the facility.
