The Assistant Food and Beverage Manager supports the daily operations of the Food and beverage departments, ensuring exceptional service and dining. Working closely with the F&B Manager, this position oversees operations, manages staff, maintains compliance with health and safety standards, and contributes to the department's financial success.

KEY RESPONSIBILITIES (Other Duties May Be Assigned):

  • Assist the F&B Manager in overseeing all aspects of food and beverage operations, including restaurants, bars, banquets, and special events.
  • Supervise and support F&B staff, providing training, guidance, and performance evaluations to ensure high service standards.
  • Ensure compliance with health, safety, and sanitation regulations, maintaining a clean and safe work environment.
  • Monitor inventory levels, place orders, and manage cost-effective operations without compromising quality.
  • Collaborate with the kitchen team to ensure timely and accurate food delivery.
  • Address customer inquiries and concerns, resolving any issues promptly.
  • Assist with inventory management, budgeting, forecasting, and financial analysis to ensure profitability and cost control.
  • Collaborate with other departments to support events, promotions, and activities involving food and beverage services.
  • Manage recruitment, scheduling, and staffing to ensure proper coverage and efficient operations.
  • Complete daily, weekly, and monthly administrative duties, including hiring, training, sales tracking, labor tracking, payroll, deposits, inventories, ordering, and P&L accounting.
  • Ensure food and beverage areas meet health and safety guidelines.
  • Oversee safe operation of equipment and enforce safety protocols.
  • Administer and enforce internal cash controls and procedures.
  • Uphold standard operating policies (SOPs), Minimum Internal Control Standards (MICS), and Missouri Gaming Commission regulations.
  • Must be flexible to work nights, weekends, and holidays as required.

SUPERVISORY RESPONSIBILITIES:

  • Interview, hire, train, and manage employees in compliance with company policies.
  • Plan, assign, and direct work; appraise performance; reward and discipline employees.
  • Address employee concerns and resolve issues promptly.

QUALIFICATIONS: To perform this job successfully, an individual must satisfactorily perform each essential duty. The requirements below represent knowledge, skill, and/or ability. 

EDUCATION / EXPERIENCE: 

  • High school diploma or equivalent is required; a Bachelor’s degree in Hospitality Management or a related field is a plus.
  • Previous experience in food and beverage management, preferably in a hospitality or casino environment.

CERTIFICATES AND LICENSE: 

  • Must be able to obtain and maintain a Missouri Gaming Commission License.
  • A valid Driver's License is required.

SKILLS & COMPETENCIES: 

  • Strong communication skills in English, both verbal and written.
  • Proficiency in basic math and Microsoft Office; experience with F&B management software is preferred.
  • Excellent interpersonal skills with a customer-focused attitude.
  • Strong problem-solving abilities and the capacity to excel in a fast-paced environment.
  • Familiarity with cash registers and basic point-of-sale functions.
