What are the responsibilities and job description for the Director of Outlets position at Marc & Rose?
Summary Of Position
The Director of Outlets at The Scott Resort & Spa is responsible for the overall success of all resort Food & Beverage outlets and operations. This includes The Canal Club restaurant, lobby bar, pool and in-room dining. This individual will be responsible for hiring, training, overall customer service, purchasing, quality assurance, driving programming and revenue and maintaining cost ratios and profitability of these outlets.
Essential Functions
Interview, select, train, coach and develop Food & Beverage leaders and associates for all F&B outlets.
Drive revenues through training, upselling programs, marketing, innovative initiatives and competitive pricing surveys.
Organize and conduct pre-shift and departmental meetings communicating essential information to the staff, including but not limited to: service essentials and standards, guest connection, house count and menu changes.
Oversee leadership schedules to ensure floor coverage and support.
Resolve problems beyond satisfaction of involved parties.
Work closely with the Executive Chef and Chef de Cuisine to service all outlets as well as special events in the restaurant.
Maintain excellent communication and collaboration with all departments and attend relevant meetings. Work closely with Chef de Cuisine, Sous Chefs, and F&B leadership on menu creations and associate training and familiarization.
Support the communication of specialty drink lists and wine lists.
Maintain consistent floor presence throughout facility and kitchen areas to visually monitor and take action to ensure food quality and service standards are met.
Verify temperatures, judge appearance and taste of products and check preparation methods to determine quality.
Work closely with Chef to ensure all staff is trained in food safety processes.
Develop and implement cost saving and profit enhancing measures.
Utilize computer to accurately charge customers, create forecast and revenue reports and write correspondence.
Ensure POS system is updated and accurate.
Ensure maintenance of equipment by calling for repairs and training staff on proper use.
Conduct competitive research and report trends and recommendations.
Support the entire Food & Beverage operation including supervising other areas if necessary, handling special projects, running promotions, handling public relations and marketing.
Work closely with the Marketing team on all F&B promotions and developing support materials.
Provide clean and safe environment by assigning and assisting with cleaning. Maintain cleanliness of all outlets and monitor cleanliness during the operation of these outlets.
Any other tasks as assigned by the General Manager.
Education: Any combination of education and experience equivalent to graduation from high school or any other combination of education, training or experience that provides the required knowledge, skills and abilities. High School Diploma required. College degree preferred.
Experience: Position requires a minimum of five (5) or more years of Food & Beverage experience with both line level and leadership responsibility. Must excel in the area of training and development and possess a level of fine dining savvy and experience.
Certifications or Licenses: Maricopa County Food Handler’s and Food Manager’s card and Arizona Title IV alcohol certification. CPR certification is preferred.
Knowledge, Skills, And Abilities
Ability to sit/stand/walk for long periods of time
Experience with Word, Excel, Power Point, Toast and other administrative office, hotel and POS systems
Ability to implement creative and unique programming as well as sustain overall operation at a high and consistent level
General knowledge of STAR Report
Excellent verbal and written communications skills
Ability to lead and motivate on an individual and group or team basis
Ability to memorize, behave, perform and adhere to The Scott Resort & Spa’s Service Essentials, Department Standards, and Policies & Procedures
