Manta's Ceviche is expanding! We are launching a dedicated food trailer to serve the high-demand lunch rush at Schofield Barracks.
We are seeking a reliable and independent Food Preparation Lead to run the culinary operations on the ground. This is a one-person operation: you will be the captain of the ship during your shift. While you will work independently, we provide full training and on-site supervision during the launch phase to ensure you are comfortable and ready to succeed.
The Role
This is a hands-on, high-energy role designed for efficiency. A self-ordering kiosk at the window handles the orders and payments, allowing you to focus 100% on food preparation and fulfillment without the distraction of handling cash or taking orders manually.
1. High-Speed Prep & Service Lead (70% of Shift)
- Solo Operation: Independently manage the trailer workflow from setup to breakdown.
- Lead the Line: Execute daily preparation of ingredients according to Manta’s Ceviche recipes, ensuring brand consistency in every bite.
- Kiosk-Driven Workflow: Receive orders via the digital kitchen display and execute them promptly. No cashier duties required.
- Precision & Speed: Handle high-volume portioning (seafood and produce) to support rapid turnover during the lunch rush (11:00 AM – 1:00 PM).
2. Sanitation, Inventory & Management (30% of Shift)
- Inventory Control: Track daily usage, minimize waste, and communicate resupply needs to management.
- Safety Compliance: Strictly follow HACCP and food safety protocols to prevent contamination—critical for military base standards.
- Cleanliness: Execute a thorough daily cleaning regimen for the trailer (floors, equipment, prep surfaces) within the shift time constraints.
Training & Support
- Onboarding: You will not be alone on Day 1. We provide comprehensive training and direct supervision during the initial opening period to teach you our recipes, systems, and safety standards.
- Transition: Once certified on our SOPs, you will transition to running the trailer independently, with management support always just a phone call away.
Qualifications
- Experience: Proven experience in food service or "back of house" prep. Experience working alone or opening/closing a kitchen solo is a plus.
- Autonomy: Must be self-motivated and comfortable working independently without constant supervision.
- Speed & Focus: Must possess the stamina to maintain peak performance during the 2-hour lunch rush.
Requirements
- Physical: Ability to stand for the entire 5-hour shift and lift up to 50 lbs.
- Access: Must be able to pass a background check to obtain base access for Schofield Barracks.
- Reliability: Punctual and reliable attendance is mandatory for this solo role—if you don't show, the trailer doesn't open.
