Overview:
The AM Prep Cook/Dishwasher is responsible for preparing high-quality food items and maintaining a clean, sanitized kitchen ahead of daily restaurant and banquet service at Manor Vail Lodge. Working the early shift, this role ensures kitchens are fully stocked, organized, and guest-ready before service begins — combining food preparation, dishwashing, and general kitchen cleanliness to support consistent execution of recipes and food safety standards.

- Earn between $20-$22/hr and Typical shifts are between 6am-1pm. Needs to be available for weekends and holidays. Looking for a Part Time Seasonal team member. We anticipate the position to be filled by 7/31/26 for a summer job.
Key Responsibilities – Food Preparation
- Prepare ingredients and menu components each morning according to standardized recipes and portioning guidelines.
- Set up prep and line stations ahead of breakfast and lunch service, ensuring mise en place is complete and organized.
- Possible prep responsibilities for AM and PM outlets based off demands
- Properly label, date, rotate, and store all prepared and received food items following FIFO practices.
- Operate kitchen equipment (slicers, mixers, ovens, knives) safely and in accordance with training.
- Support banquet and catering prep as needed for on-property events.
- Communicate shortages, quality issues, or equipment needs promptly to the Executive Chef.
- Assist with receiving and storing deliveries during early morning hours.
Key Responsibilities – Dishwashing & Cleaning
- Wash, sanitize, polish, and store dishes, utensils, pots, pans, and other kitchen equipment in accordance with health and safety regulations.
- Maintain cleanliness and organization of dishwashing and food prep areas, ensuring all areas meet sanitation standards.
- Dispose of garbage, recycling, and compost in appropriate bins, keeping the work area clean throughout the shift.
- Ensure the dishwashing area is stocked with detergent, sanitizing agents, and cleaning cloths; notify manager when supplies run low.
- Maintain sanitation and temperature control standards in compliance with Eagle County health regulations.
- Complete opening/closing checklists and cleaning duties, and follow all Manor Vail Lodge and brand standards for consistency and cleanliness.
Qualifications
- Prior prep cook, dishwashing, or kitchen experience preferred; hotel, resort, or high-volume restaurant experience a plus.
- Basic knife skills and familiarity with standard kitchen equipment and techniques.
- Ability to read and follow recipes, prep lists, and production sheets.
- Able to obtain a Colorado Food Handler certification required within 30 days of hire (or current certification).
- Reliable, punctual, and able to consistently work early morning shifts, including weekends and holidays.
- Strong teamwork and communication skills within a fast-paced culinary environment.
Physical Requirements
- Ability to stand and walk for extended periods, up to a full shift.
- Ability to lift and carry up to 50 lbs; frequent bending, reaching, and repetitive motion.
- Comfortable working near heat sources, sharp tools, steam, and cleaning chemicals, and in walk-in coolers/freezers.
- Ability to work in a mountain-altitude environment (Vail, CO – elevation ~8,150 ft).
Compensation & Colorado Compliance
This is a non-tipped, hourly position and is paid at or above Colorado's state minimum wage of $15.16/hour (2026), consistent with the Colorado Overtime and Minimum Pay Standards (COMPS) Order. Actual rate is determined by experience and posted per role in compliance with the Colorado Equal Pay for Equal Work Act.
Eligible employees accrue paid sick leave under the Colorado Healthy Families and Workplaces Act (HFWA). Overtime is paid in accordance with Colorado and federal law for hours worked beyond 40 in a workweek or 12 in a workday.
