Use your skills to manage the custody and security of detainees in the facility in compliance with Management & Training Corporation (MTC) and customer directives. You will directly supervise the cook II and directs the work of detainees assigned to the food service area.

What you will do
- Supervise and monitor work of cooks and food service workers, which includes long periods of walking and standing
- Prepare and cook quantity of food required according to menu and number of detainees.
- Maintain kitchen equipment in orderly workable condition. Ensure work area is safe, clean and sanitary always.
- Exercise judgement and use discretion when responding to incidents and determine whether to intervene or call security staff.
- Prepare foods as directed for special facility functions and visitors.
- Assist in cleaning kitchen work areas following each meal.
- Direct the work of detainees assigned to the food service area.
- Maintain the count and control of knives and other controlled kitchen tools. Provide a count of all control items at the beginning and end of each shift. Responsible for the security of the food service area.
- Requires the pushing and pulling of food carts.
- Regular and predictable onsite attendance is required.
- Incumbents are required to work overtime when directed to do so.
What you will need
- High school diploma or GED
- Two years of food service experience
- Food service training
- Valid food handler’s permit
- US citizenship or lawful US permanent resident
- Valid driver’s license with an acceptable driving record
- Must successfully complete required preservice training post-hire
