We're looking for a passionate Regional Culinary Manager to lead our kitchen teams across NYC, NJ, PA, and CT. In this role, you'll champion our commitment to exceptional food and beverage while fostering a collaborative, “no task is too small” spirit among BOH leaders and their teams. You'll ensure consistency and quality through inventory oversight, portion control, and cost‐management, uphold our health and food safety standards, and authentically tell the Maman story through every menu item. As our Regional Culinary Manager, you will:
Staff Leadership & Development: Oversee BOH staffing across NYC—forecast labor needs, create schedules, recruit and onboard new team members, and manage performance (including disciplinary actions when necessary).
Performance Evaluation: Partner with the Regional Culinary Director to assess and coach BOH leaders and their teams, driving continuous improvement.
Service & Quality Standards: Maintain Maman's high standards for order fulfillment times, plating consistency, and the flavor and presentation of our food and baked goods.
Strategic Implementation: Translate the company's kitchen operations strategy into actionable plans—ensuring each location executes seamlessly.
Inventory & Cost Control: Enforce best practices for inventory management, portion control, ordering procedures, and COGS guidelines to protect margins.
Operational Consistency: Monitor and audit each location to ensure quality, quantity, and brand standards are met.
Health & Safety Compliance: Ensure all kitchens adhere to company policies and local health department and safety regulations.
Training & Menu Development: Roll out new recipes, menu items, and seasonal offerings—training BOH teams in collaboration with the Regional Culinary Director.
Clear Communication: Keep an open line with kitchen leaders and report progress, challenges, and opportunities directly to the Regional Culinary Director.
Hands-On Support: Work alongside kitchen managers—providing documentation, troubleshooting guidance, and on-the-spot solutions to maintain smooth operations.
