What are the responsibilities and job description for the Sushi Chef position at Maku rolls?
Be part of something new in Miami - Sushi Production Lead
MAKU Rolls is bringing the Australian style grab and go sushi roll to Miami. In Australia, hand rolls are an everyday favorite: fresh, simple and made to enjoy on the go. We're launching that experience here, starting with events and growing into our first storefront in Miami
We're looking for our very first team member: a Sushi Chef to lead our production and help build a brand from day one.
WHY JOIN MAKU
- Be the first. You won't be one more cook on a big line. You'll be the person behind every roll that leaves our kitchen.
- Grow with us. As we open our first storefront, this role grows into a full time Sushi Lead position, with a key part in setting up and running our kitchen.
- A better rhythm. Our rolls are made ahead, so your work is mostly focused daytime production.
- Clear and organized. Our menu, recipes and portions are already set. You get to focus on what you do best: great rice, great fish, perfect rolls.
-$22 to $25 per hour.
WHAT YOU'LL DO
- Prepare our base components in our Miami commissary kitchen: sushi rice, raw fish (salmon and tuna), smoked salmon, tempura and cooked shrimp, teriyaki and crispy chicken, sauces and fresh vegetables
- Roll our 11 menu items following our recipe specs for weight, size and ingredients
- Pack and label rolls ready for events and delivery
- Keep the kitchen clean, organized and up to food safety standards
- Track ingredient levels and let us know what needs to be ordered
- Scale production based on each event's final roll count
WHAT WE'RE LOOKING FOR
- Solid sushi experience, ideally in high volume or grab and go production
- You know your sushi rice: seasoning, texture and consistency
- Safe and confident handling of raw fish and seafood
- Speed without losing quality
- Organized, reliable and comfortable following set recipes
- Florida Food Handler certification (or willing to get it)
- Authorized to work in the US
SCHEDULE
Part time and event based to start. Shifts are confirmed at least 7 days in advance, with final roll counts 72 hours before each event.
