We are seeking a talented and experienced Lead Baker to oversee our daily operations, ensure product quality, and inspire our team.
Position Summary
The Lead Baker is responsible for supervising the bakery team, managing daily baking operations, and ensuring all baked goods meet the highest standards of quality and consistency. This role involves hands-on production, management of the bakery production department recipe development, and maintaining a clean, organized, and efficient bakery environment.
Key Responsibilities
- Team Leadership & Supervision: Lead, train, and mentor a team of bakers and assistants. Assign tasks, monitor progress, and ensure deadlines are met.
- Baking & Production: Oversee the preparation and baking of various goods (e.g., bread, pastries, cakes). Manage the entire process from ordering ingredients to the final, high-quality product.
- Quality Control: Inspect all baked goods for quality, consistency, and presentation. Uphold established recipes and standards.
- Recipe Development: Develop and test new recipes to expand product offerings and stay updated on baking trends.
- Inventory & Cost Management: Monitor ingredient levels, place orders, and manage inventory to minimize waste. Coordinate with suppliers and help manage labor costs.
- Sanitation & Safety: Ensure the bakery adheres to all health and safety regulations. Maintain a clean workspace and sanitized equipment.
- Operational Efficiency: Plan production schedules, identify improvements, and collaborate with management to achieve bakery goals.
Qualifications & Skills
- Experience: Extensive professional bakery experience, with at least 2-3 years in a leadership or supervisory role. Experience in high-volume production or working with natural starters/sourdough is a plus.
- Knowledge: In-depth knowledge of baking techniques, food safety regulations, and inventory management.
- Skills: Strong leadership, time management, and organizational skills.
- Physical Demands: Ability to stand for long periods, work in a high-heat environment, and lift up to 25 lbs.
- Business Mindset: Ability to apply cost-saving strategies, budgeting, and waste reduction methods to minimize expenses and maximise profits.
- Education: A culinary or baking degree is preferred but not required.
