Position Overview
We are seeking a motivated and detail-oriented individual to join our team as a Pasta Production Team Member. This role is hands-on and requires a strong work ethic, attention to detail, and a genuine passion for making fresh pasta.
ResponsibilitiesPrepare fresh pasta daily, including both semolina-based doughs (extruded/rolled) and egg-based doughs (sheeted and hand-cut).
Operate pasta production equipment and hand tools safely and effectively.
Weigh, measure, and mix ingredients with accuracy.
Roll, shape, cut, and portion pasta consistently to specifications.
Maintain high standards of cleanliness, organization, and food safety.
Work collaboratively with the culinary team to meet production needs.
Assist in inventory and quality control of pasta production.
Understanding of the differences between semolina-based and egg-based doughs.
Familiarity with hydration levels, mixing techniques, resting times, and gluten development.
Ability to roll dough evenly and cut/shapes such as tagliatelle, pappardelle, ravioli, tortellini, etc.
Knowledge of how to properly extrude and dry short pastas (penne, rigatoni, etc.).
Basic understanding of food safety and sanitation standards.
Strong attention to detail and consistency.
Ability to work efficiently in an early-morning production environment.
Previous experience in pasta production or culinary experience is preferred, but we are willing to train the right candidate.
Must be able to stand for extended periods and lift up to 50 lbs.
Dependable, punctual, and self-motivated.
