We’re looking for a highly organized and detail-oriented professional to help manage the administrative and operational backbone of our food truck division.
Role Overview
Los Mariachis is seeking a highly organized, detail-oriented coordinator to manage the administrative side of our multi-unit food truck business. This position serves as the central point of control for customer correspondence, event scheduling, maintenance follow-up, and permitting/compliance across multiple Connecticut municipalities.
Key Responsibilities
- Manage customer inquiries, emails, calls, and follow-ups for event bookings
- Maintain and organize the master calendar for multiple food trucks and trailers
- Prevent scheduling conflicts and ensure proper truck/event assignments
- Handle permits, applications, and approvals across different cities/towns
- Track renewals for licenses, insurance, inspections, and registrations
- Coordinate maintenance and repairs for trucks, trailers, and equipment
- Organize event files and compliance documentation for smooth execution
- Communicate with event organizers, municipalities, and internal team
Qualifications
- Administrative, scheduling, compliance, hospitality, catering, or logistics experience.
- Strong follow-through, professional communication, and comfort dealing with municipalities and event organizers.
- Excellent organization with spreadsheets, calendars, document tracking, and deadline management.
- Bilingual English/Spanish preferred but not required.

- Every event is confirmed, assigned, and documented clearly.
- Permits and inspections are submitted on time with no missed deadlines.
- Each truck and trailer has a current file for maintenance, insurance, registration, and compliance.
- Restaurant management receives clean handoffs once events are booked so execution runs smoothly.
