Job overview
The Food & Beverage Director is a member of the management team and is critical in creating memorable experiences for guests while driving profitability in the Food and Beverage Operations. This position has direct bottom-line responsibility for all operations and guest satisfaction indices.
Responsibilities include but are not limited to managing and supervising the Food & Beverage department, facilities, kitchen and its employees in a safe and cost-effective manner; ensuring the sanitation and cleanliness of the kitchen and food preparation areas; ensuring safe food handling and service practices; working closely with the sales staff to service meeting rooms, catering and banquet needs; effectively managing the day-to-day operations, including staffing, training, budgeting and forecasting; and ensuring quality, consistency and creativity at the highest levels, while maximizing the operation's personnel and resources.
Your day-to-day
- Ensure total guest satisfaction and the finest quality of food and beverage.
- Supervise and coordinate employee responsibilities to ensure that the restaurant is running efficiently and profitably.
- Assist with all performance reviews and monthly one-on-ones.
- Address and resolve guest and employee concerns.
- Possess in-depth knowledge of all food and beverage menus.
- Ensure that the department is staffed sufficiently for each meal period.
- Maintain P&L authority over the assigned location and department.
- Manage the reservation system, flow of service, staff scheduling, schedule adjustments and attendance notices.
- Identify talent both internally and externally; interview, hire, train and onboard new associates, with the intention of finding future leaders.
- Implement effective controls of food, beverage and labor costs among all sub-departments and monitor the food and beverage budget to ensure efficient operation and that expenditures stay within budget limitations, including achieving budgeted revenue.
- Monitor and control food and beverage inventories.
- Manage food preparation.
- Develop and manage the annual food and beverage budget.
- Monitor and approve payroll/tips on a weekly/biweekly basis and ensure accuracy.
- Ensure compliance with health, safety, sanitation and alcohol awareness standards.
- Ensure that restaurant equipment is properly maintained and safely operated.
- Perform and understand managerial functions with POS system; is ultimately responsible for all cash handling and accountability.
- Ensure that the venue is compliant with all federal, state and local laws and regulations, as well as company policies.
- Communicate clearly and concisely with heart-of-house employees during service.
- Attend, lead and participate in any training sessions, departmental meetings and pre-service meetings.
- Ensure the completion of all opening and closing procedures by FOH employees.
- Develop and implement guidelines and control procedures for purchasing and receiving.
- Work with the General Manager on capital expenditure requests for the department.
- Work as part of the team and provide support to all fellow team members.
- Assist in any other task or duties as requested by management.
