What This Role Is This role blends hospitality leadership with operational discipline. You'll lead the bar program and own the systems that keep it profitable — while setting the tone for service, energy, and guest experience every shift. The right person is equally comfortable greeting a regular by name and reconciling a variance report. If you can only do one of those, this isn't the seat.
What You'll Own
Hospitality & Guest Experience
- Set the standard for service and energy on the floor — every guest greeted, every visit worth coming back for
- Lead from the floor during peak volume, supporting staff and engaging guests directly
- Build the kind of regular-driven room that makes Landmark a place people return to, not just visit
- Turn problems into recovery moments and turn first-timers into regulars
Bar Program & Beverage
- Lead the full bar program: cocktail execution, draft and spirits ordering, par levels, and menu pricing
- Run detailed weekly bar and beverage inventory with documented counts and variance reporting
- Build and maintain pour-cost tracking; hold the program to target margins
- Drive speed, consistency, and presentation behind the bar during peak volume
Operations & Cost Control
- Own beverage COGS tracking and inventory/cost software (Margin Edge)
- Manage bar ordering, receiving, and vendor relationships to hit beverage cost targets
- Identify and eliminate waste, over-pour, and shrinkage through real systems, not guesswork
- Submit accurate, on-time payroll and manage labor to schedule
Standards, Service & Cleanliness
- Enforce daily standards with zero drift: no wobbly tables, clean and stocked table tents, full uniform compliance
- Hold the line on service speed and quality during high-volume shifts
- Run open/close checklists and cleanliness standards front and back of house
- Coach and hold staff accountable with specific, consistent feedback
Required Qualifications
- 3 years of restaurant management experience
- Experience in high-volume operations
- Working knowledge of labor, food cost, and bar cost management
- Proven ability to maintain standards and manage teams
- Availability to work nights and weekends
Preferred Qualifications
- Experience as an AGM or acting GM
- Experience in bar inventory and cost controls
- Strong understanding of service standards and guest experience
