What are the responsibilities and job description for the Pastry Cook position at Lakeside Country Club?
Job Summary: The Pastry Cook is responsible for the daily preparation and production of a wide range of pastries, desserts, breads, and other baked goods in accordance with the standards and quality set by the pastry department. This individual works closely with the Pastry Chef and team to ensure consistency, creativity, and execution of both plated and buffet desserts.
Job Duties:
Production & Preparation
- Prepare a full range of pastry and bread products, including but not limited to cakes, brownies, cookies, custards, pies, icings, mousses, ice creams, chocolates, laminated pastries, pizza dough, biscuits, muffins, and rolls
- Assist with the production of plated desserts, buffet displays, showpieces, and seasonal offerings
- Operate bakery equipment such as mixers, ovens, sheeters, proofers, and other tools with care and precision
- Perform other tasks as assigned by the Executive Pastry Chef or Executive Chef
Creativity & Presentation
- Assist in the development of new pastry items for quarterly seasonal menu and recurring annual club events under the guidance of the Pastry Chef
- Assist in the setup and presentation of banquet dessert stations, ensuring proper signage, utensils, and serving vessels are provided
Operations
- Submit and receive requisitions for all pastry products, ingredients, and supplies
- Support the development and standardization of bake shop recipes
- Review and check BEOs for updates or changes, and revise the production list accordingly when the Executive Pastry Chef and Assistant Pastry Chef is absent
Quality Control & Food Safety
- Manage multiple events simultaneously, ensuring desserts are prepared and served accurately and punctually
- Conduct quality checks to ensure all finished products adhere to established quality and presentation standards
- Ensure proper product rotation and discard any items past their expiration date
- Uphold food safety, sanitation, and hygiene practices in accordance with local health regulations
- Notify supervisors of any product shortages, spoilage, or equipment malfunctions
Job Knowledge, Skills and Abilities:
- Strong knowledge of basic pastry techniques, laminated doughs, chocolate work, and/or plated desserts
- Ability to follow, adapt, and develop recipes as needed
- Ability to work efficiently under pressure to meet deadlines
- Committed to cultivating a positive, cooperative, and professional workplace
- Ability to stand for extended periods and work in hot, cold, and humid environments
- Ability to lift and carry up to 50 lbs
- Flexible availability to work early mornings, evenings, weekends, holidays, and overtime as needed.
