Job Summary:
This position is accountable for managing the Dietary Department, nutrition consultation and guidance of dietary practices for hospital patients. Responsibilities include hiring, training, developing and motivating dietary staff to meet and exceed established food preparation standards on a consistent basis. Cooks and manages daily food service operations and interacts with patrons to ensure satisfaction. Teaches preparation according to well defined recipes and follows up with staff to discuss ways of constantly improving the cuisine.
Duties and Responsibilities:
1. Cooks food according to methods which ensures maximum nutritional value and pleasing appearance. Prepares food according to individual patient needs and HAACP guidelines.
2. Develops special order and catering menus, as well as in-house special functions.
3. Interviews, hires, trains, and supervises Dietary staff.
4. Orders and maintains food inventory and stocking shipments.
5. Monitors food production and preparation to ensure that safe and sanitary methods are used.
6. Designs standards and procedures for safe food storage and preparation.
7. Coordinates staff scheduling and approves time for staff.
8. Works with all hospital and long-term care staff to assure dietary needs of patients/residents met.
9. Creates a cycle menu for regular diets.
10. Participates in all safety, security and infection control programs that are mandatory as well as those required and provided by the department.
11. Always upholds confidentiality and HIPAA compliance and reports violations to the Privacy Officer.
12. Demonstrate personal traits of a high-level commitment, motivation, and energy; team orientation; professionalism; trust; personal honesty and integrity; and a demonstration of placing others in a place of high value and treating them with dignity and respect.
13. Operates cash register, as needed.
Requirements
Education:
Minimally Required High School Diploma is required. Certified Dietary Manager Certification is required.
Preferred or Specialized Associates degree in culinary arts is preferred
Experience:
Minimally Required 2-5 years’ experience as an Executive Chef and Certified Dietary Manager. Prior supervisory experience is required.
Preferred or Specialized Prior Chef/Dietary Manager experience in Hospital setting is preferred
Skills:
Minimally Required Excellent written and verbal communication and interpersonal skills.
Knowledge:
Minimally Required Knowledge of food service operations. Knowledge of standards and procedures for safe food preparation and safe food storage.
Abilities:
Minimally Required Able to organize staff work schedules and carry out inventory management. Able to operate cash register.
Physical Requirements:
Exerting up to 100 pounds of force occasionally, and/or up to 50 pounds of force frequently, and/or up to 20 pounds of force constantly to move objects and/or a negligible amount of force frequently or constantly to lift, carry, push, pull or otherwise move objects.
