Responsibilities
- Prepare fresh pasta from scratch (mixing, kneading, rolling & shaping dough) using traditional hand techniques and modern equipment.
- Follow standardized recipes and manufacturing procedures to ensure product consistency and quality
- Operate and maintain pasta-making machinery safely and efficiently, troubleshooting mechanical issues as needed
- Maintain strict sanitation standards in accordance with HACCP (Hazard Analysis Critical Control Point) and GMP (Good Manufacturing Practices) guidelines
- Handle ingredients and materials with proper manual handling techniques, including heavy lifting and safe equipment use such as forklifts when applicable
- Adhere to all safety protocols, food safety regulations, and legal compliance standards during food preparation and processing
- Assist in cleaning and sanitizing workstations, utensils, and equipment regularly to uphold hygiene standards
Requirements
- Proven experience in food production, culinary arts, or restaurant environments with a focus on pasta or similar food items
- Strong knowledge of cooking techniques, baking, food handling, and food safety management systems such as HACCP and GMP
- Mechanical knowledge related to machine operation, mechanical troubleshooting, and maintenance of kitchen equipment
- Ability to perform basic math calculations for recipe adjustments and portion control
- Familiarity with material handling equipment operation including forklifts (certification preferred)
- Excellent knife skills and manual handling abilities for precise food preparation tasks
- Understanding of safety standards in manufacturing environments, including PPE (Personal Protective Equipment) use and heavy lifting protocols
- Knowledge of regulatory/legal compliance standards relevant to food production and manufacturing processes
- Prior experience in the food industry or restaurant setting is highly desirable
