Duties
- Prepare a variety of sushi, sashimi, and other Japanese dishes with precision and artistry, ensuring consistency and presentation excellence
- Develop new sushi recipes and menu items that reflect current trends while maintaining authentic flavors
- Maintain high standards of cleanliness, food safety, and sanitation in all work areas in compliance with health regulations
- Manage ingredient inventory, order supplies, and ensure freshness of all seafood and accompaniments
- Collaborate with kitchen staff to coordinate service flow during busy periods, ensuring timely delivery of dishes
- Educate team members on sushi techniques, presentation standards, and culinary best practices
- Monitor food quality during preparation and presentation, making adjustments as needed for optimal taste and appearance
Skills
- Extensive knowledge of sushi preparation techniques, including knife skills and fish handling
- Strong understanding of Japanese culinary traditions and ingredient sourcing
- Experience in curriculum development or training others in culinary skills is a plus
- Excellent classroom management skills for instructing junior staff or apprentices in sushi techniques
