What are the responsibilities and job description for the Beverage Operations Manager position at Ko-Kwel Casino Resort?

Let's Be Friends!

At Ko-Kwel Casino Resort, there's nothing better than being around your friends, and that's exactly the atmosphere we want to create here. We want team members to feel like they're welcomed with the unique experiences and growth we can offer. Come be part of the special atmosphere and hospitality of the hotel, or the welcoming, fun and friendly character of the restaurants and casino. Join our team in its dedication to be the leading destination for gaming and hospitality on the beautiful, southern Oregon coast!

Why this job matters

Beverage is one of the most visible, memorable parts of a guest's experience. The welcome at the bar, the pace and polish on the floor, the consistency of every pour, and the trust that we run a safe, compliant, well-controlled operation every day.

The Beverage Operations Manager leads beverage execution across the property with elevated ownership: stronger controls, stronger training, tighter standards, and a more strategic eye on service, compliance, and performance. You'll be a key partner to the Multi-Restaurant Manager (who owns front of house and dining room experiences) and the Cask Club Manager (who leads the Ko-Kwel spirits story and guest-facing Cask Club program), ensuring that our beverage program is reliable, consistent, and worthy of a "signature experience" at Ko-Kwel Casino Resort.

What you bring to the table

  • Make sure the space stays safe, clean, and friendly for both guests and the rest of the team; speak up and report any safety concerns to the Safety Committee.
  • Hold the bars high for guest service across all beverage outlets and service touchpoints.
  • Build and maintain strong internal controls that protect product, reduce loss, and ensure consistent recipe execution.
  • Lead supervisors and team members through fair, consistent employee relations: policy compliance, smart scheduling, training, coaching, and accountability.
  • Keep accurate incident documentation and operational records aligned with department and company expectations.
  • Lead responsible service culture: conduct regular OLCC responsible service/cut-off training and maintain required logs and files.
  • Stay visible in operations and actively participate in training and development across Food & Beverage.
  • Ensure compliance with food handling, OLCC regulations, and all applicable safety standards.
  • Support accurate beverage purchase order process support, storage standards, rotation, and par integrity (while coordinating with the Multi-Restaurant Manager for service and standards consistency).
  • Partner with F&B leadership to support beverage promotions, menu evolution, and product changes that fit the market.
  • Manage labor productivity using forecasts and budget expectations; adjust to business levels without sacrificing standards.
  • Own inventory accuracy: conduct monthly inventories and validate inventory value extensions.
  • Ensure daily stocking standards and beverage station readiness through par discipline and clear routines.
  • Lead banquet bar execution: staffing, setup standards, and on-site operational support as needed.
  • Provide leadership presence in bar/lounge environments-professional, upbeat, and guest-focused.
  • Drive consistent guest interaction standards through training and reinforcement aligned with department expectations.
  • Support opening/closing procedures and cash-handling stewardship practices that are clean, consistent, and auditable.
  • Support creation and improvement of service training tools and new hire training processes.
  • Jump in where needed to support the team and keep things running smoothly. (Other duties as assigned)

Physical stuff to know

We've included the typical physical parts of the job here. If you need an accommodation to do the work, just let us know-we're here to support you.

You'll need to be available to work weekends, holidays, and evenings when we are busy. During your shift, you'll stand and walk for extended periods and use hands for handling tools, controls, product, and service items. It's important to stay calm and make good decisions under pressure, especially when dealing with stressful situations or upset people. Just a heads-up-the casino environment may expose you to secondhand smoke.

This is a quick summary of the main duties and requirements-it might not cover everything you could be asked to do.

Must-haves, nice-to-haves, and maybe some bonus points

  • Friendly and approachable attitude that helps guests (and the team) feel welcome and cared for every day.
  • High School Diploma or GED required; a degree in hospitality/business (or equivalent experience) is a strong plus.
  • 3 years leading bar/beverage or restaurant operations (gaming/hotel-resort experience is a bonus).
  • Bartending background that gives you credibility, speed, and standards.
  • ServeSafe certification (or ability to obtain within 90 days).
  • OLCC knowledge and ability to obtain/maintain required permits/licenses.
  • Strong computer skills (MS Office; ability to work with operational systems).
  • Confidence with spreadsheets, cost-of-sales thinking, inventory controls, and basic budgeting/forecasting.
  • A controls mindset - you care about recipe adherence, pour standards, storage discipline, and loss prevention.
  • A training mindset - you enjoy building consistency through coaching, refreshers, and on-the-floor feedback.
  • Collaborative leadership style - especially strong partnering with the Multi-Restaurant Manager and Cask Club Manager so the overall program feels seamless to guests.
  • Must pass and remain compliant with background check and drug-free workplace policies
  • This position requires the ability to promote a professional work ethic.
  • Ability to maintain confidence and use tact and discretion in a variety of situations.
  • Comfortable communicating clearly and positively with both guests and teammates.
