Job Summary
Kimes Nursing and Rehab is seeking an experienced and organized Dietary Manager to oversee all food service operations within our skilled nursing facility. This role ensures residents receive nutritious, well-balanced meals that meet dietary needs, physician orders, and regulatory standards, while maintaining a clean, safe, and efficient kitchen environment.
Responsibilities
- Plan, develop, and oversee menus that meet residents’ nutritional needs and physician-ordered diets
- Ensure compliance with all federal, state, and local regulations (including sanitation and food safety standards)
- Supervise, train, and schedule dietary staff
- Manage food and supply inventory, ordering, and cost control
- Collaborate with nursing and clinical teams regarding resident dietary needs and changes
- Monitor meal service to ensure quality, temperature, and presentation standards are met
- Maintain accurate records, including dietary assessments and inspections
- Ensure kitchen cleanliness and adherence to infection control procedures
- Address resident preferences, concerns, and special requests to enhance satisfaction
Requirements
- Previous experience in dietary management, preferably in a skilled nursing or healthcare setting
- Certified Dietary Manager (CDM) certification preferred (or willingness to obtain)
- Knowledge of therapeutic diets and nutrition standards
- Strong leadership, organizational, and communication skills
- Understanding of food safety regulations and sanitation guidelines
- Ability to manage budgets and control food costs
