Sous Chef – Sortino’s Italian Kitchen
Kalahari Resorts & Conventions is seeking a Sortino’s Italian Kitchen – Sous Chef to support the culinary operations of our popular signature dining experience. Established more than 60 years ago by Giorgio and Giacomo Sortino with the opening of the original Sortino’s Little Italy in Sandusky, Ohio, Sortino’s is a new-age red-sauce restaurant where old-school Italian cuisine meets the modern era. As Sous Chef, you’ll support the Head Chef in all day-to-day operations while leading the line, inspiring your team, and helping deliver an exceptional dining experience built on premium ingredients and flawless execution.
As part of our leadership team, you’ll embody our Promise to Lead with Love—guiding, supporting, and inspiring associates while delivering extraordinary guest experiences. You’ll be responsible for training, mentoring, and motivating team members to achieve excellence across all aspects of the operation.
Key Responsibilities
- Kitchen Management – overseeing day-to-day operations, including food preparation, cooking, and quality control, ensuring efficiency and consistency.
- Cost Management and Inventory control- monitoring the following: labor, inventory, and managing supplies to ensure the kitchen is well stocked and minimizing waste.
- Maintaining high standards and sanitation practices – continuously working to improve the kitchen’s efficiency, workflow, and overall quality of food and service.
What We’re Looking For
- We require a background of three years of progressive culinary experience and three years of management experience.
- Basic knowledge of P&L, labor control, & food cost/recipe costing.
- Experience in a resort setting is preferred.
- High-volume restaurant experience is required.
- Experience with Italian cuisine is desired.
