Job Summary
We are seeking a reliable and efficient Line Cook to join our kitchen team. The ideal candidate will be responsible for setting up their station, preparing ingredients, and executing dishes to our exact standards during service. This role requires an individual who thrives in a fast-paced environment, communicates effectively with the team, and maintains the highest standards of cleanliness and food safety.
Note: Japanese speaking proficiency is a strong plus for this position
Responsibilities
- Station Setup and Prep
- Gather and chop necessary ingredients, portion proteins, and appropriately stock all needed culinary tools.
Cooking and Order Execution
- Fry, grill, sauté, sear, or bake food items precisely as ordered without burning or undercooking.
- Follow strict recipe guidelines, portion controls, and plating instructions for every ticket to ensure consistency.
Communication and Timing
- Call out order ticket times clearly and listen to the expediter and other station cooks.
- Coordinate pickups with the expo and other stations, ensuring every part of a meal finishes together.
- Adjust cooking pace to match peak rush times and ticket flow.
Cleanliness and Sanitation
- Wipe down counters, sanitize surfaces, and change cutting boards regularly throughout the shift.
- Strictly follow safe food handling guidelines and proper temperature controls.
Breakdown and Restocking
- Label, date, and appropriately store leftover food using proper FIFO rotation rules.
- Clean equipment, restock inventory levels for the next shift, and complete all required closing checklists.
- Organize all sauces, pans, and plates within arm's reach (Mise en Place) to ensure an immaculate, logical station before the shift begins.
Requirements
- Time Management & Speed: Ability to juggle multiple orders with varying cook times efficiently.
- Knife Skills: Capable of chopping, dicing, and slicing vegetables or meats quickly, safely, and with uniform size.
- Cooking Techniques: Solid understanding of fundamental cooking methods (grilling, sautéing, searing, frying, roasting).
- Organization: Strong dedication to Mise en Place and keeping a neat work environment.
- Teamwork: Excellent communication skills to work seamlessly with both Back of House and Front of House staff.
- Language: Japanese speaking is a plus.
Pay: $18.00 - $22.00 per hour
