We are seeking a highly experienced Senior Artisanal Bread Baker with deep expertise in traditional Italian breadmaking and small batch production. This senior role combines hands on baking leadership with the opportunity to work in a newly upgraded bakery environment featuring brand new, professional grade ovens designed for artisan production.

The Senior Artisanal Bread Baker’s duties and responsibilities include but are not limited to:

Bread Production & Craftsmanship

  • Formulate, mix, and develop doughs using traditional and advanced artisanal techniques.
  • Manage fermentation schedules (e.g., poolish, levain, biga, sourdough cultures).
  • Shape, score, and bake breads to achieve consistent quality, flavor, and texture.
  • Oversee the full production cycle from scaling ingredients to finished loaves.
  • Ensure proper maintenance and feeding of sourdough starters and preferments.

Quality Control

  • Maintain high standards for product consistency, appearance, and taste.
  • Conduct daily quality checks and adjust formulas or processes as necessary.
  • Ensure all breads meet artisanal standards and brand specifications.

Leadership & Team Management

  • Supervise, train, and mentor junior bakers and bakery assistants.
  • Coordinate daily production tasks and delegate responsibilities.
  • Provide guidance on techniques, timing, and craftsmanship.
  • Maintain a positive, efficient, and safety focused working environment.

Production Planning & Inventory

  • Forecast production needs based on demand, seasonality, and sales trends.
  • Plan and execute daily and weekly baking schedules.
  • Manage inventory of ingredients and supplies; place or request orders as needed.
  • Ensure minimal waste through efficient planning and dough management.

Equipment Operation & Maintenance

  • Operate mixers, proofers, ovens, and other baking equipment safely and efficiently.
  • Oversee routine cleaning, calibration, and light maintenance of bakery equipment.
  • Report or coordinate repairs to ensure uninterrupted production.

Food Safety & Compliance

  • Uphold all health, safety, and sanitation standards.
  • Monitor ingredient handling, storage temperatures, and cleanliness.
  • Document procedures to ensure full compliance with industry regulations.

Recipe Development & Innovation

  • Develop new artisanal bread varieties and seasonal offerings.
  • Improve existing recipes to enhance taste, texture, or shelf life.
  • Stay current with baking trends, grains, and fermentation techniques.

Customer & Vendor Interaction

  • Collaborate with front of house, retail, or wholesale partners to understand product needs.
  • Communicate with suppliers regarding flour types, specialty grains, or custom ingredients.

Qualifications:

The ideal Senior Artisanal Bread Baker will have:

  • 8–15 years of hands-on artisanal or scratch bakery experience.
  • Expert-level proficiency in traditional Italian breads and fermentation techniques.
  • Advanced understanding of dough science and oven management.
  • Experience working with deck or hearth-style ovens.
  • Excels in a team environment.
  • Ability to mentor and set professional standards for bakery staff.

Salary : $30 - $38
