Hudson & Charles is a nose to tail sustainable butcher shop located in NYC's West Village and Upper West Side. We are committed to a sustainable philosophy and whole animal utilization. Our animals arrive to our shops whole (lamb& goat), split (pig) or quartered (beef, veal and always 100% grass-fed). All animals are sourced from small local family owned and run farms in New York State and Pennsylvania. Our farmers raise their animals antibiotic free, hormone free and steroid free on farms using regenerative agricultural techniques.
We are looking for a butcher's apprentice who will learn the craft of whole animal butchering from the ground up, starting with basic knife skills to eventually breaking down poultry, pig, lamb, goat and sides of beef. We will teach you the art of whole animal utilization and everything that surrounds it. This is a great opportunity for someone to grow with us and get involved in helping to support the local food economy. We are ideally looking for a candidate who is seeking long term company growth.
We are hiring for a FT schedule of 40 hours a week. This is a PAID apprenticeship. We offer a very generous meat stipend as well as store discounts. We also offer a retirement account after the vested period.
It doesn't hurt to have a sense of humor, a good attitude, comfy shoes and be to be highly motivated and curious.
Daily responsibilities include:
- Unloading deliveries
- Assisting the butcher with trim work, grinding
- Organizing the walk-ins
- Assisting in kitchen prep
- Assisting in sausage prep
- Help filling customer orders for deliveries
- Customer service
Requirements:
- 40 hours/week
- 1 year commitment (you don't learn this craft in 3 months)
- Ability to lift 100 pounds
