What You’ll Do:
As a Sushi Cook, you’ll prepare and assemble fresh sushi products in our shared production facility. You’ll work with both automated and manual sushi-making equipment to help deliver consistent, high-quality products every day.
Responsibilities include:
- Preparing sushi rice, seafood, and vegetables following Hissho’s standardized recipes.
- Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified
- Rolling and cutting sushi using Suzumo automated machines.
- Following batch sheets and production targets for accuracy and efficiency.
- Packaging and labeling finished trays using BOHA terminals.
- Maintaining strict food safety and sanitation standards (HACCP/GMP).
- Assisting with daily setup, cleaning, and equipment sanitation.
- Supporting continuous improvement and process consistency across the team.
Requirements
- The candidate must have weekend availability. No prior sushi experience is required, as training will be provided.
- Basic understanding of food safety and sanitation.
- Comfortable working evenings or overnight shifts.
- Able to lift up to 50 lbs and stand for long periods.
- ServSafe certification (or willingness to obtain).
- Ability to effectively communicate in English.
Preferred:
- Experience using Suzumo or similar sushi rolling/cutting machines.
- Familiarity with ready-to-eat (RTE) food manufacturing.
- Knowledge of BOHA labeling systems.
- Missouri Seafood HACCP certification
