DIRECTOR OF FOOD AND BEVERAGE
POSITION OBJECTIVE
The Director of Food and Beverage oversees the operation of all resort outlets and facilities. He/She will be fully responsible for the operational and financial success of the operations. He/She will be responsible for selecting, training, and coaching all departmental team members and ensuring operations run to meet high standards.
ESSENTIAL JOB FUNCTIONS
· Maintains departmental staffing levels to provide optimal performance.
· Ensures adherence to departmental and resort guidelines, policies, and procedures.
· Responsible for smooth, efficient, cost-effective operation of all outlets to include labor management, supervision of all aspects of service and inventory control.
· Interacts with guests frequently to ensure satisfaction and enjoyment of experience.
· Ensures operational costs are kept within forecasted budgetary guidelines.
· Oversees security, control and proper use of operating supplies and equipment for each food and beverage outlet.
· Reviews daily payroll report controls daily labor costs by reducing staff as business activity diminishes.
· Communicates daily with resort sales staff, providing current information on all upcoming functions.
· Interviews, trains, appraises, coaches, counsels, and disciplines departmental personnel.
· Evaluates individual employee performance, determines areas in need of improvement or requirements for advancement, establishes goals, objectives and training needs required to achieve same
· Coaches, counsels, retrains employees as needed to ensure superior levels of performance.
· Attends all required resort meetings to keep abreast of in-house activities and upcoming events and maintain effective communications with other departments in the resort.
· Attends departmental meetings as required to communicate effectively with all food and beverage personnel to ensure that they are kept current on pertinent resort information and activities.
· Banquet experience required.
· Other duties as assigned.
EDUCATION/EXPERIENCE
· 2 or more years of leadership experience in a lodging setting with several outlets and a sizeable banquet operation

PHYSICAL DEMANDS
· Must be able to lift and move up to fifty pounds.
· While performing the duties of this job, employee is regularly required to stand, walk, reach with hands and arms, stoop, kneel and crouch.
