A.M. Prep Cook

POSITION SUMMARY

Responsible for supporting daily kitchen operations during the morning shift through food preparation, family meal production, soup preparation, and banquet prep. Maintains a clean, organized, and properly stocked work area while following recipes, portion standards, food-safety procedures, and direction from the Chef or Sous Chef.

ESSENTIAL DUTIES AND RESPONSIBILITIES

The essential functions include, but are not limited to, the following:

Complete daily AM prep list as assigned by the Chef or Sous Chef.

• Prepare and portion ingredients for daily restaurant and banquet service.
• Prepare family meals for kitchen staff.
• Prepare soups, stocks, sauces, and other assigned recipes.
• Assist with banquet preparation, including vegetables, salads, proteins, starches, sauces, and garnishes.
• Follow standardized recipes, proper portion sizes, and food-quality standards.
• Properly label, date, store, and rotate all prepared food.
• Maintain a clean, organized, and sanitary prep area throughout the shift.
• Properly clean and sanitize knives, cutting boards, equipment, and work areas.
• Follow all food-safety and sanitation procedures, including proper temperature control and storage.
• Communicate prep shortages, equipment issues, and other concerns to the Chef or Sous Chef.
• Assist other kitchen team members and stations when needed.
• Help maintain organized walk-ins, freezers, dry storage, and prep areas.
• Complete assigned duties in a timely and efficient manner while maintaining consistent quality.

MINIMUM QUALIFICATIONS (KNOWLEDGE, SKILLS, AND ABILITIES)

High school diploma or equivalent preferred.

Previous experience related to Culinary Arts required.

License/Qualifications

Food Handlers Card OLCC Certification

Grasp, turn, and manipulate objects of varying size and weight. Requires fine motor skills and hand-eye coordination.
