Position Summary
The Dietary Manager is responsible for overseeing all food service operations within the assisted living community. Duties include managing food ordering, meal preparation and dietary staff supervision. The Dietary Manager ensures residents receive nutritious, safe and appealing meals in accordance with Idaho regulations (IDAPA) and facility policies.
The Dietary Manager ensures that meals meet residents’ dietary needs, preferences, and physician-ordered diet criteria while maintaining high standards of sanitation and food safety.
Duties and Responsibilities
Food Service Operations
- Plan, organize, and supervise daily food service operations
- Ensure timely preparation and service of meals and snacks
- Maintain a clean, safe, and sanitary kitchen environment
- Ensure adequate food supply is maintained (perishable and non-perishable)
Menu Program and Nutrition
- Follow the provided dietitian-approved menu
- Ensure Menus are posted daily for resident review
- Provide residents with physician ordered therapeutic diets
- Adjust meals based on residents’ needs, preferences, and cultural considerations
Resident Care Support
- Ensure meals are appetizing, nutritious, and appropriate in texture
- Coordinate with care staff to monitor overall resident food and fluid intake
- Provide alternative items if residents refuse meals or have preferences
- Promote a positive dining experience for residents
- Attend monthly Resident Council to support residents’ dietary discussions
Dietary Staff Supervision
- Supervise dietary staff (cooks, aides, kitchen staff)
- Schedule dietary staff to ensure adequate coverage
- Maintain cleanliness of kitchen, storage, and dining areas
Food Safety and Sanitation
- Ensure compliance with:
- Local Health Department regulations and Infection Control Standards
- Maintain cleanliness of the kitchen, food storage, and dining areas
- Ensure proper food handling, storage, labeling, and temperature control
- Prevent cross-contamination and foodborne illness
Inventory & Budget Management
- Order food and supplies within budget guidelines
- Maintain inventory of food and kitchen supplies
- Monitor waste and implement cost-control measures
Compliance & Documentation
- Maintain dietary records, including:
- Menus (planned and served)
- Resident Diet Orders
- Food Supply Documentation
- Participate in inspections and audits
- Ensure compliance with IDAPA and Facility Policies
Communication
- Communicate with Administrator (Executive Director), Nursing staff, and caregivers regarding resident dietary needs
- Participate in resident care planning as needed
- Address resident and resident family concerns related to meals and nutrition

Pay: $18.00 - $20.00 per hour
