Lead Line cook duties will consist of assisting the head chef with their daily tasks. The successful candidate will play a key role in contributing to our client satisfaction. Chefs/cooks we're looking for must be able to execute:
- 1 to 3 meals per day, recreating those meals to our standard feeding clients and staff.
- Prep specific numbers of items based on a daily prep list for items in the takeaway client fridges including parfaits, salads, desserts, sandwiches, prepackaged left overs from previous shifts.
- Pull frozen items based on the menu to prepare for meals in advance.
- Utilize left overs and waste to prepare take away items and menu items.
- Pivot on the fly to provide specially prepared meals for clients that are struggling or have dietary restrictions. I.e. grilled cheese for someone without an appetite.
- Prepare specially created weekly menus for clients with mental health hurdles or dietary restrictions. For example, Sometimes it's necessary for the Administration to build out a special weekly menu for a client who has significant mental health struggles and will only eat one type of food or is hyper fixated on certain aspects of meals.
- Never deny clients anything without asking for help/approval first.
- Bring menu items to the table to help the team round out weekly menus.
- Open the kitchen and be prepared to serve breakfast within 1-1.5 hours.
- Clean and close the kitchen within 1-1.5 hours of serving Dinner.
- Clean and maintain all equipment, fridges, freezers, and spaces daily.
- Help maintain the inventory spreadsheet by entering x2 Sysco Invoices into a spreadsheet for monthly cost analysis.
- Participate in monthly counts, provide accurate information on missing or low items, and provide accurate accounting for incoming orders on Tuesday and Friday.
QUALIFICATIONS
- Proven experience in all stations of the kitchen and multiple kitchen skills
- Knowledge of kitchen equipment, basic tools, small wares, culinary techniques
- Able to anticipate the needs of others in the kitchen and proactively work to meet those needs
- Strong communication skills
- Organization and cleanliness
- Seeking minimum of 1 year experience in a fast paced atmosphere
- Able to meet all scheduling commitments
- Ability to lift up to 50lbs on a regular basis and stand for extended periods
- Flexible schedule and reliable transportation
- Certified in proper food handling
- Food Managers Certification
