This Culinary position requires extensive meat-cutting skills as well as previous culinary experience. This position entails providing the highest quality product for restaurants, garde manger and banquets, by trimming and cutting items to maximize their full potential. The Butcher works closely with the Executive Chef, Sous Chefs and Purchasing on meat and fish inventory, labeling, rotation of food, requisitions and controls all returned items. This position also oversees all activities in the butcher shop, and maintains the highest possible standard for a sanitary work area. This position reports to the Executive Chef/Executive Sous Chef.

Key Responsibilities
- Receive, inspect, and properly store raw meats, poultry, and seafood following HACCP and food safety standards.
- Perform all butchery tasks including cutting, trimming, deboning, grinding, and portioning according to menu specifications and standardized recipes.
- Prepare mise en place and assist in daily production for outlets, banquets, and in-room dining.
- Maintain accurate inventory and assist in requisitioning products to support production needs.
- Collaborate with chefs to maintain proper yields, portion control, and minimize food waste.
- Clean and sanitize butcher room, tools, equipment, and storage areas daily.
- Label and rotate all meats and proteins according to FIFO standards.
- Support other culinary stations (hot line, garde manger, banquets) as needed during peak periods.
- Ensure all food is prepared and presented to Hyatt brand standards for quality, flavor, and appearance.
- Follow all safety, sanitation, and equipment-care procedures in compliance with local health regulations and Hyatt policies.

Qualifications
Qualifications – External
- 2 years of culinary experience in a hotel, resort, or high-volume restaurant kitchen.
- Proven butchery experience with beef, poultry, pork, and seafood fabrication.
- Strong knife skills and understanding of portion control and yield management.
- Knowledge of food safety, sanitation, and cross-contamination prevention.
- Ability to stand for extended periods and can lift up to moderate weight.
- Flexibility to work early mornings, nights, weekends, and holidays as required.
- Culinary degree or certificate from an accredited institution is preferred.
- Experience in banquet or large-scale production environments is preferred.
- Prior Hyatt or luxury hotel brand experience is preferred.
- Familiarity with vacuum sealing, dry-aging, or charcuterie techniques.
- Strong attention to detail and high standards of quality.
- Team player with a positive attitude and willingness to assist in multiple kitchen areas.
- Effective time management and ability to multitask under pressure.
- Reliable, punctual, and professional in demeanor and communication.
